I’ve been loving these colorful mini-peppers because they have the perfect amount of sweetness and crunch! These creamy feta stuffed peppers have been a popular recipe for years but I wanted to make a vegan-friendly version of this snack! Naturally, I turned to hummus. Specifically, I used my za’atar spiced hummus which is my favorite.

The Best Hummus for Stuffed Peppers

I love this za’atar spiced hummus recipe but there are plenty of other hummus recipes you can try! You could use oil-free hummus for a low-fat option or grab a bundle of basil and make pesto hummus! You can also use storebought hummus, to make this recipe even easier.

How to Make Hummus Stuffed Peppers

Slice each pepper in half lengthwise and use a small spoon to scrape out any seeds. Lay the pepper halves flat onto a cutting board.sliced bell peppers

Use a small spoon to scoop 2-3 teaspoons of hummus into each pepper and spread until smooth.peppers stuffed with hummus
