What’s your favorite salad combination?
My favorite, easiest and most often go-to salads involve throwing together whatever roasted vegetables I have on hand (carrots, asparagus, brussel sprouts, cauliflower, butternut squash, eggplant…..)with either chick peas or black beans, sometimes leftover brown rice medley (trader joe’s) and avocado…instead of dressing I usually do a scoop of hummus, salsa, hot sauce or a drop of Island Soyaki…so easy, simple, healthy and as you say, uses up what you have on hand!
I love using salsa or hummus (or guacamole) instead of dressing, too!
That chickpea salad sounds awesome! Garbage salads are by far my favorite. I love throwing in whatever I can find in the fridge, Ha!
Strawberries and walnuts are always a good pair! I think my favorite salad combination is massaged kale, topped with chickpeas, goat cheese, roasted kabocha squash, mushrooms and red peppers. All my favorites in one bowl! 🙂
