Strawberry Kale Salad

This strawberry and kale salad comes together quickly but the combination is delicious! The simple dressing is easy to create and this is a great make-ahead salad since the kale won’t get soggy in your lunchbox. The salty pine nuts take this to the next level, but there are plenty of other nuts you can substitute based on what you have available!

All of these salads could be enjoyed on their own, or along with a sandwich, some pita & hummus, a cup of soup, or whatever you’re craving! I love tossing these together, because it’s such an easy way to eat my veggies!
What’s your favorite salad combination?
My favorite salad is any green veggie topped with avocado, mushrooms, onion and jalapeno! I’ve been eating a salad everyday since I got my new salad tosser, I’m so in love with it.
I love salads that have a mix of hot and cold ingredients. So I’ll have grated fresh carrot, zucchini, sprouts and spinach and then top it with hot cooked tofu and mushrooms and a drizzle of sweet chilli.
I love salads but I can never make them just right. All of your salads look really good though, I think the problem with me is that I don’t buy the right ingredients or it just don’t make enough. One day I hope to improve on these skills LOL.
Hold up… you’ve been craving *salads*??? I can’t say that’s ever happen to me, but I hope it does! haha I’ve been having strawberry salads almost every day this week. They’re quite tasty!
I love summer salads. All of these look so great. I love strawberries with walnuts or pecans. I had one last night with dinner! I need to try that chickpea salad too. So easy!
I think you can call anything a salad if you put it on lettuce. ๐
This is a great post, because it is reminding me of some ‘oldies but goodies’ that I love and need to make again–a wild rice salad, a three bean salad (with super simple dressing), and a cabbage crunch salad–all of them my aunt’s recipes that I recreated. She is a master salad maker apparently.
I love garbage bowl salads – just throw in anything you can find. And feta is a MUST…it’s my newest cheese obsession. Have tried goat feta? It’s addicting!
Goat feta?! I had no idea that was a thing!
Salads with grilled vegetables, feta and a fruit dressing easily wins me over :)!
Mmm I love grilled squash on a salad!
My fav spring/summer salad is spinach, strawberries, walnuts (or candied pecans), fresh goat cheese, olive oil & aged balsamic vinegar. Williams Sonoma has THE BEST balsamic I’ve ever had! My mom in law gives me a bottle every Christmas.
I really like the sounds of the black bean & avo salad. Yum!
Really? I’ve never tried their balsamic but I’ve been a vinegar addict lately!
Mmmmm that rice/veggie/kale salad looks amazing! I love salads ๐
