I had the Smoked Gouda Panini from Ipanema Cafe on my mind, and I figured I could recreate it at home. I’m convinced that the only difference between a panini and a grilled cheese is the name. And I wasn’t trying to get too fancy here.
To recreate this, I stopped by the store to pick up a few ingredients:
How to Make the Perfect Gouda Grilled Cheese
I like using hearty whole wheat bread like this Ezekiel Bread from Food for Life. The slices should be able to stand up to enough toasting so the edges can get crispy! Shred fresh gouda cheese, rather than buying pre-shredded cheese. Pre-shredded cheese has anti-caking agents that can make it harder to melt.
What to Serve with a Gouda Grilled Cheese
I served mine with some homemade tomato soup, and it was the perfect comfort food combination! But this would also be good with a salad or sweet potato fries!

Ingredients
- 4 slices whole wheat bread
- 1 tablespoon olive oil
- 1/4 cup sliced sweet onion
- 4 oz smoked gouda
- 1–2 medium tomatoes
Instructions
- In a large frying pan, saute the onions in the olive oil.
- Cook over low to medium heat for 12-15 minutes until the onions begin to caramelize.
- Set the onions aside.
- In that same pan, lay two pieces of bread in the leftover olive oil.
- Top each slice with 2oz of shredded cheese.
- Allow the cheese to begin melting, then top with the onion, tomato, and final slice of bread.
- Cook for 5 minutes on each side, until toasted and the cheese is melted.

Tonight I had roasted red pepper and tomato soup for dinner with lots of cheese and my roommate had pizza. Comfort!! Do you know how badly I wanted to grab his slice of pizza to eat with my soup? Ahhh!!

Yummy I love Goulda. My mum used to buy it all the time when I was a kid (my mum is dutch) and my sister and I would always eat so much of it. I’ve never thought of using it in a grilled cheese but looking at yours I know how delicious it would be.
I love doing simple meals, they can be just as satisfying if not more so than some of the more complex dishes.

You had me sold on this one with the title alone :). Grilled cheese is a major comfort food for me, and the addition of tomato and the use of gouda is just plain fabulous! Plus, you really cannot beat the ease and simplicity of making a grilled cheese sandwich!
I always freeze all of my bread. I cannot go through a loaf fast enough to keep it on my counter! 🙁
Oh, and one more thing….have you ever tried spreading coconut oil on the bread before grilling it? It makes for the BEST grilled cheese sandwiches!

Yup, grilled cheese and tomato soup is where it’s at when it comes to comfort food! And I agree–frozen Ezekial bread is the best for grilled cheese! Gouda’s my favorite, yet I haven’t had it since I started eating a little dairy again?? That needs to be remedied. Probably in sandwich form…
