I had the Smoked Gouda Panini from Ipanema Cafe on my mind, and I figured I could recreate it at home. I’m convinced that the only difference between a panini and a grilled cheese is the name. And I wasn’t trying to get too fancy here.
To recreate this, I stopped by the store to pick up a few ingredients:
How to Make the Perfect Gouda Grilled Cheese
I like using hearty whole wheat bread like this Ezekiel Bread from Food for Life. The slices should be able to stand up to enough toasting so the edges can get crispy! Shred fresh gouda cheese, rather than buying pre-shredded cheese. Pre-shredded cheese has anti-caking agents that can make it harder to melt.
What to Serve with a Gouda Grilled Cheese
I served mine with some homemade tomato soup, and it was the perfect comfort food combination! But this would also be good with a salad or sweet potato fries!

Ingredients
- 4 slices whole wheat bread
- 1 tablespoon olive oil
- 1/4 cup sliced sweet onion
- 4 oz smoked gouda
- 1–2 medium tomatoes
Instructions
- In a large frying pan, saute the onions in the olive oil.
- Cook over low to medium heat for 12-15 minutes until the onions begin to caramelize.
- Set the onions aside.
- In that same pan, lay two pieces of bread in the leftover olive oil.
- Top each slice with 2oz of shredded cheese.
- Allow the cheese to begin melting, then top with the onion, tomato, and final slice of bread.
- Cook for 5 minutes on each side, until toasted and the cheese is melted.

Great tip on using frozen bread! I take the pan off the stove once it gets a nice golden brown color & cover the grilled cheese with a lid to let it get really gooey without burning!
I am now craving pimiento cheese. I want some really badly and am fearful of what would happen to my stomach if I gave in. Maybe heavy on the mayo and I’d be good to go? Maybe? 🙂
I have never thought about frozen bread being best for grilled cheese! That makes so much sense, and I always have the problem of cheese not melting before bread burns. Genius, my dear.
You know what MAKES that sandwich for me? The onion!! Without that, I would have past this by . . . but including caramelized onion makes it sound delicious!

Believe it or not, but in our house, Vishnu is the grilled cheese master. It’s cute because he’s so proud of it too! Anyway, I’ve never cooked with regular gouda before. Have you ever tried goat gouda? It is really good. I’m thinking you can finish off any leftover cheese with some good bread, olives, and a little wine!

Grilled cheese and soup is definitely one of the best comfort meals… Reminds me of being a little kid again, as does a creamy bill of Mac & Cheese. Right now, I’d have to say that my favorite comfort food is probably oatmeal. No matter how bad I’m feeling, oats always manage to bring some comfort.
Kraft macaroni and cheese was my go-to meal as a kid! It will always have a special place in my heart, even if that fake cheese packet freaks me out now 😉
Mmm grilled cheese is total comfort food- reminds me of boarding school for some reason :)! My ultimate comfort food is spaghetti (or linguine) in marinara sauce, mushrooms, zucchini and parmesan..mmmm! Isn’t it funny how the simplest foods can bring such joy :)!
