Sometimes a recipe is so simple, you wonder if itโ€™s worth sharing. But I know many of you are like me, looking for easy ways to get food on the table quickly. This peach ricotta flatbread is one of those recipes that you can whip up in minutes, making it ideal for parties! Looking for more ways to use summer produce? Try this summer vegetable flatbread.

Ingredients & Substitutions

The key is using quality ingredients like fresh peaches, creamy ricotta cheese, and a tangy balsamic glaze. You can use nectarines instead of peaches if that’s what you have on hand. You can make the flatbread from scratch if you prefer, but store-bought flatbread works perfectly to keep things simple. My go-to is Stonefire Flatbreads, but Aldi and Trader Joe’s have great options too! I always keep some in my freezer so I can make this recipe anytime.

High Protein Crust

If you want to add more protein to this recipe, try using my 2 ingredient Greek yogurt pizza crust or my cottage cheese pizza crust. Both of these work well with this recipe and it’s a great way to add more protein to the meal.

Tips & Tricks

  • Crispier crust: For the best results, bake the flatbread directly on the oven rack. Place a baking sheet on the rack below to catch any toppings that may fall.
  • Extra toppings: Feel free to get creative with your flatbread! Add a handful of arugula after baking or sprinkle with chopped walnuts or pistachios for a crunchy texture.
  • Make it spicy: Try using a drizzle of hot honey instead of balsamic glaze.
