Pizza Veggies
If you love pizza, you have to try pizza veggies! Enjoy a rainbow of vegetables seasoned with classic pizza flavors and topped with fresh mozzarella. It’s easy to make and it’s the perfect way to add more veggies to your plate!

After falling in love with this pizza beans recipe, I wondered if I could use the same seasoning trick with a variety of veggies. I gathered my favorite veggie pizza toppings and got to work. I love how this recipe turned out. I’ve been enjoying it as a main dish, but you can also serve it as a side dish with your favorite protein.
Ingredients & Substitutions
I used a variety of vegetables that are common pizza toppings, but you can swap in whatever you have. If you’re missing a veggie or two, it’s no big deal. Swap in yellow squash for zucchini or use any color bell pepper you like. I’m not normally a big fan of mushrooms, but I do think they add a classic veggie-pizza flavor. I used a little pizza sauce to add additional flavor, but you can just toss in more tomatoes to make it saucier if necessary. I think fresh mozzarella really shines here, but any mozzarella will do!

I simply plated them and ate them with a fork, but you can serve them with crusty bread or flatbread if you want to round out the pizza vibes. Lately I’ve been pairing these veggies with these garlicky white beans for extra protein and fiber.

Ingredients
- 1 tablespoon olive oil
- 4oz baby bella mushrooms, sliced
- 1 yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 cup cherry tomatoes, halved
- 1 small zucchini, chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon oregano
- 1/4 teaspoon crushed red pepper flakes
- 2/3 cup pizza sauce
- 4oz fresh mozzarella cheese
- Salt & pepper to taste
Instructions
- In a large nonstick skillet, add the olive oil and mushrooms and cook over medium heat for 4 minutes.
- Add the onion and bell pepper, and continue to cook for 5 minutes.
- Add the zucchini, tomatoes, garlic powder, onion powder, oregano, and crushed red pepper flakes and continue to cook for 5 minutes.
- Add pizza sauce and top with mozzarella.
- Cover and do not stir.
- Cook for 3 minutes until the mozzarella is melted.
- Top with additional crushed red pepper flakes and season with salt and pepper to taste.
This was such a fun idea! We served the veggies with rice and loved them!
