- 1/2 cup cottage cheese (I used 4% milkfat)
- 1 cup milk (I used 2%)
- 1 tablespoon cornstarch
- 4oz shredded sharp cheddar cheese (about 1 cup)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
- Cook the pasta according to package directions.
- In a blender, combine the cottage cheese, milk, cornstarch, cheddar cheese, and seasonings. Blend until smooth.

This was such a great & easy recipe! I made the whole thing dairy free, using 2% lactaid milk, Â lactose free cottage cheese, & daiya sharp cheddar. it turned out delicious, along with using whole wheat pasta! 100% will be making it again.
This was insanely delicious! I swapped the cheddar cheese for vegan cheese (violife cheddar shreds) and instead of paprika I added nutmeg. Also added some nutritional yeast for extra cheesiness and nutrition. Wowza!Â
