Ingredients and Substitutions
Pasta: I’ve made this with regular pasta and chickpea pasta and both are delicious! I think whole wheat pasta would be great, too.
Cottage cheese: Adds tanginess and creaminess to the dish as well as lots of protein. I used 4% milkfat cottage cheese.
Milk: I used 2% milk, but whole or skim milk will be fine.
Cornstarch: Helps thicken the sauce for a creamy consistency.
Shredded sharp cheddar cheese: I recommend using a block of cheese rather than pre-shredded cheese. Pre-shredded cheese contains anti-caking agents that can make the sauce grainy.
Garlic powder: Infuses a savory flavor into the dish.
Paprika: Provides a subtle smokiness and a touch of color to the mac and cheese.

LOVE THIS. I made it last night with some protein noodles, and OMG. it’s so delicious! I believe I’m going to try to use this base for a buffalo chicken mac and cheese!
This was delicious! I didn’t have enough milk, so I subbed oat milk. I also added chopped spinach, because I love spinach. I will definitely be making this again!!
I didn’t see the exact measurements for everything that supposed to go in the cottage cheese sauce for mac & cheese. Could you please let me know what to use?
This was such a great & easy recipe! I made the whole thing dairy free, using 2% lactaid milk, Â lactose free cottage cheese, & daiya sharp cheddar. it turned out delicious, along with using whole wheat pasta! 100% will be making it again.
This was insanely delicious! I swapped the cheddar cheese for vegan cheese (violife cheddar shreds) and instead of paprika I added nutmeg. Also added some nutritional yeast for extra cheesiness and nutrition. Wowza!Â

This was fantastic – but definitely needs more cheese than called for in the recipe. I used 3oz sharp cheddar and 3oz gouda cheese.
I made this but like hamburger helper with rotelle tomatoes and ground turkey. It turned out amazing.
