The “All-You-Can-Eat” Recipe Round Up

There are a lot of things I’m good at.

  • I can turn anything into a song. (Which is how I still know all of the US Presidents, in order.)
  • I can walk down the stairs in heels, with a cup of coffee in one hand, while texting with my other hand.
  • And don’t even get me started about my mix cd abilities.

But there are also a lot of things I’m not good at.

  • I have no sense of direction. None.
  • I cannot sit still through movies. Especially science fiction movies. 
  • I have no portion control. Sit me down next to a bag of tortilla chips, and I could probably finish them off in an hour. Maybe less.

Thankfully, once you’ve identified your weakness, you can figure out how to fix it. Or in my case, buy a GPS, watch movies in pieces on netflix, and try these recipes…

I can’t be the only one out there who likes to load up their plate with giant servings.

So here are some of my favorite huge-portion-low-calorie recipes and foods:


Last night, I was feeling like italian food, so I made this giant, yet low calorie Easy Italian Bake.

A giant 2 cup serving of this only has around 250 calories. And you get to eat and eat and eat.

Craving fast food? Slice up some butternut squash and make Butternut squash fries!

They taste like sweet potato fries, but you can eat a giant plate of them for a fraction of the calories!

In the mood for a snack bar, but want it to last more than 2 bites?

Make one of these cereal bars, which are about twice the size of a Larabar, for ~80 calories less!

Craving something sweet? Have you tried Arctic Zero, yet? (I know, it’s not a recipe, but it’s so good, you need to try it.)

Can’t find Arctic Zero in your area? Whip up some Banana Ice Cream for a sweet, low calorie treat!

  2. I have no sense of direction either. Zero. Annddd no portion control when it comes to certain foods–especially if they involve peanut butter and chocolate. Or any nut butter really. And I have no solution for that one.. yet! ;) I really need to try those butternut fries!! they look amazing.

  3. I agree with the first two things you are bad at… I am too! Can’t do directions and can’t sit still…err ever!
    These are great recipes, I am goign to try one when I get home from school!

  4. I like your style. Because yeah, quantity is important to me… one of the reasons why I don’t really enjoy things like truffles. I’d rather have a massive cookie for the same calorie amount.

  5. Fun category for recipes: stuff that I can eat until I’m 120% full without feeling too bad about it. I love it! I want to try that italian bake…it looks really yummy. I”m big on banana ice cream. It really does feel decadent! In fact, during the past few hot weeks, I’ve had ice cream for breakfast at least 4 times!

  6. I had to laugh out loud at the “watch movies in pieces” comment because I am getting to that point as well. I think of it as adult-onset ADD.

  7. When it comes to ANY ice cream, I can polish off a enormous amount, that I would really not share with you lol Im an ice cream freak!! And butternut squash. Ive seriously eaten an entire butternut squash in one sitting as fries dunked in plenty of ketchup :)

  8. I can totally learn anything in a song too – it’s how I know all the 50 states in alphabetical order AND the books of the Old Testament!

  9. I feel like we have similar weaknesses. I can’t even tell left from right, much less manage to get anywhere without a GPS. And I can and will eat everything left next to me. Banana ice cream is a favorite solution of mine, too–as are kale chips. And I love your idea of butternut squash fries! I even have a butternut squash sitting at home, waiting to be used.

    • Ohh yes! Kale chips are awesome when I have the munchies for something crunchy! I almost ALWAYS burn the first batch, but usually they’re good the second time around ;)

      • I’m pretty good at burning them too, but I usually go ahead and eat them anyway :) Extra crunch? I love tahini kale chips even more, but I guess that kinda impacts the eat-as-much-as-you-want element

  10. Love high volume foods. They’re the best!

    I like to use cabbage slaw as my base for all asian dishes (instead of rice) — you can eat so much more, get totally full, and have no cals basically.

    I’m bad with patience. I have none. Literally, none.

  11. I’ve tried that arctic zero icecream before and it was pretty tasty! Sometimes I’d rather eat a whole pint than just “half a cup” of something super rich. Cause even then, I’m still going to eat more than half a cup. :)

  12. Portion control can be a bit of an issue for me too!!! I LOVE banana soft serve when I need something sweet – one square of dark chocolate just isn’t enough!!! I also love stirfries – sometimes I skip the rice/pasta and go for lots & lots of veggies.

  13. haha too funny, i think we all like a big portioned meal w/out the guilt every once in a while and these are fabulous ideas! i still need to get my hands on that ice cream stuff… next trip to WF perhaps :)

  14. low cal and high quantity/volume foods are awesome. my faves are collard or kale chips. i also love pickled veggies-beets,artichoke hearts,green beans, etc.

    i’m totally bad at dealing with being interrupted when i’m trying to do something. oy vey-it brings out the worst in me :(

  15. i get lost so easily, i cringe when people stop and ask me for directions lol. i like big low cal portions too i like muesli but always feel done out as the bowl looks so small compared to the same weight of porridge. I like adding chickppeas to bulk meals up

  17. I love veggie filled sammiches! Volumous and filling (temporarily) and they don’t leave me feeling like a doughboy!

  18. I’m the worlds worst when it comes to portion control! I don’t know if it’s due to how I was raised(southern gal), my fear of getting hungry, or my love for food. It’s probably all 3. I’ve never been even slightly overweight due to running a ton, but if I ever got injured or quit, I would def gain a ton. It’s hard to eat the correct portions, healthy fod or not. I just love to eat. It’s something that I will want to fix if I ever have kids. I want to show them that you won’t starve, and that we can eat anything as long as it is portioned. Everything in moderation, right? I’ve just never been a moderation kinda gal….i like to do everything bigger and better! :)

  23. I also love big portions. Any dish with spaghetti squash is a good option… you can eat a ton of it for not that many calories. I have to try that Italian bake!

    I love veggie lasagna. It’s got a butt ton of vegtables with cheese. I can eat the whole pan for less than 100 calories. Yummm.

  26. I used to be an awful cook. Seriously. I couldn’t make eggs and I would burn spaghetti. But recently I’ve gotten better and better :)

  27. I’m the same with ALL the things you’re bad at! I got lost on the way to the police station once, which ain’t good for a local journalist, especially as it’s 5 minutes’ drive from the office…:-) I get bored watching films and can’t risk big bags of crisps for just that reason…
    Having said that. I’m not good at the things you are either; maybe rubbish funny poems are more my talent!

  28. Your first bullet point made me crack up!! When I was younger, I listened to these cd’s by Broadway Kids (I think that’s what it was called) and they had a “presidents Song” that named all of them :D So funny!

    Walking down the stairs in heels while texting and holding coffee is a skill that takes years to perfect. Good thing I have been practicing since grade school — minus the coffee part. Replace coffee with Mt. Dew, and that was me.
    Sci-fi is stupid.
    I don’t sit still. AT ALL.
    I couldn’t navigate my way out of a paper bag. Think of Snooki and Ronnie on this past week’s “Jersey Shore” trying to find their way to the gym and cafe, and that would be me on a good day.

  34. Butternut squash fries are the way forward, I’ve been testing out other squash fries too so far enjoying kabocha and coquina squash fries too – the latter are nice and sweet and gorgoeous with a table spoon of maple syrup or a sprinkle of cinnamon!

  35. A few goodies to share-large quantities-no guilt: 1. smoothies-1/2 scoop of protein powder, pinch of salt, tsp or less of instant coffee (decaf of course) a bunch of sweetener and then any extract (vanilla? a little bit of crystal light drink mix? tea) 1 c. water and 3 c. ice. Throw it in the blender for a while (2 min or so) and you have about 2 pints of cold, sweet, creamy goodness!

    Goody #2 which might make some people nervous…raw (or cooked) meringue-egg whites, pinch of salt whipped for 2 min, add a pinch of cream of tartar OR 1/4 t (a few drops in the cap) of plain vinegar. Whip again. Add sweetener/sugar and some flavoring (not necessary with the sweet-but vanilla is delicious!) Eat it as is, throw it in the freezer or put it in a pan and bake it. Be careful how much liquid flavoring you add since liquid kills the meringue!

    #3-U-bet sugar free chocolate syrup tastes great and has zero calories and zero carbs

    #4-jello of course, but double the water and add a little crystal light for a flavor boost. You can get more bang for the buck! Same thing with pudding-1 c. milk with 2. water to one package of fat free, sugar free pudding mix and then freeze it. defrost for 30 sec. It is awesome!
