I love making rice or grain bowls for a quick and easy meal. It’s a great way to use up leftover vegetables in the fridge, and you can easily mix and match what you have on hand. Feel free to get creative with your grains! You can use white rice, brown rice, or other grains like barley, farro, or quinoa. This farro grain bowl is a great one and you only need a few ingredients. For toppings, I like to add a variety of roasted vegetables. Try broccoli, cauliflower, bell peppers, squash, and/or sweet potatoes. If you want to add more greens, add a handful of spinach, kale, or arugula to the bottom of your bowl, then add your grain, veggies, and sauce. If you want to add extra protein to your bowl, think about adding lentils, chickpeas, shelled edamame, tempeh, or tofu to the bowl!
