Why I Love This Recipe

Sometimes I get a craving for a pumpkin chocolate chip cookie but I don’t want to tempt myself with a whole batch of cookies. Or maybe I’m just in the mood for something sweet, but I don’t want to preheat the oven. That’s where this recipe comes in! This is a “mug cake” style cookie which means it cooks in the microwave in just a couple of minutes. Plus, this recipe is vegan!

How to Make a Single Serving Cookie

Mix all the ingredients together, then transfer the mixture to a greased, microwave-safe dish. Microwave on 50% power so you can cook the cookie slowly without risking burning the edges. Microwave times vary so keep a close eye on the cookie!

Recipe Tips

  • I like using mini chocolate chips, so you get a little bit of chocolate in every bite! But you can use any chips you have on hand.
  • To keep this vegan, I used dairy-free chocolate chips. Enjoy Life makes great vegan chips!
  • Be sure to spray the ramekin before adding the dough, so your cookie doesn’t stick to the cup!

The Best Container for a Single Serving Cookie

I like to use a microwave-safe ramekin, which is the perfect size for one of these cookies! But if you don’t have a ramekin, you can use a mug or a small microwave-safe glass dish.

Can I double the recipe?

Can this cookie be made in the oven?

Yes! To make this single-serving pumpkin cookie in the oven, preheat the oven to 375 degrees. Then bake for 15 minutes or until set. Insert a toothpick in the center and when it comes out clean, it’s ready to enjoy!

Ingredients

Scale
  • 2 tablespoons pureed pumpkin
  • 2 teaspoons brown sugar
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons whole wheat pastry flour (or all purpose)
  • 1/8 teaspoon ground cinnamon
  • Pinch of ginger
  • 1/8 teaspoon baking soda
  • 1 teaspoon mini chocolate chips

Instructions

  1. Combine everything except the chocolate chips in a small bowl.
  2. Spray a ramekin with non-stick spray and scoop the batter in.
  3. Sprinkle with chocolate chips.
  4. Microwave on 50% power for 1 1/2 – 2 minutes. (Check after 1 1/2 since it depends on your microwave.)
  5. Once it’s set, dig in!
