Mediterranean Chickpea Bowls
These Mediterranean Chickpea Bowls are filled with vegetables and drizzled with a Greek yogurt sauce for an easy, delicious meal that comes together in minutes!

I’m hooked on Mediterranean flavors. From homemade Tzatziki sauce to baked feta with tomatoes, I’m craving these things on repeat! This Mediterranean Chickpea Bowl has all my favorites: crunchy cucumbers, juicy tomatoes, salty feta, and plenty of crispy chickpeas!
How to Make Crispy Chickpeas
There are a few different ways to make crispy chickpeas. For this recipe, I prefer making them on the stovetop, because it’s a little faster.
Drain and rinse the chickpeas and use a paper towel to gently pat them dry. In a large bowl, toss the chickpeas with olive oil and sprinkle with za’atar seasoning.
In a non-stick skillet, cook the chickpeas over medium heat for 7-8 minutes, stirring frequently, until crispy and browned.

For the dressing, I mixed 5% plain Greek yogurt, olive oil, and za’atar seasoning. It’s simple to make but it’s loaded with flavor.
What is Za’atar Seasoning?
Za’atar seasoning is typically a blend of dried thyme, marjoram, oregano, sesame seeds, and salt. You can find it at most major grocery stores, near the other spice blends. You can also find it at specialty spice stores like Penzy’s or you can even get it on Amazon!
Substitution Ideas
To make this recipe vegan, skip the feta cheese and the yogurt sauce. In place of the yogurt sauce, whisk together 2 tablespoons of tahini with 1 tablespoon of lemon juice. Add a pinch of salt to taste.
If you don’t have za’atar seasoning, don’t worry! There are tons of seasoning options that are delicious in these bowls. Toss the chickpeas with 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and salt, and pepper to taste. Top your bowl with a sprinkle of fresh dill for even more flavor!

Ingredients
- 1 15oz can chickpeas, drained and rinsed
- 2 tablespoons olive oil, divided
- 1 teaspoon za’atar seasoning, divided
- 1/4 cup full fat plain Greek yogurt
- 2 cups shredded lettuce
- 1/2 cup cucumber slices
- 1/2 cup cherry tomatoes
- 1 tablespoon diced red onion
- 1/4 cup crumbled feta
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large bowl, gently toss the chickpeas with 1 tablespoon olive oil and sprinkle with 1/2 teaspoon za’atar seasoning.
- In a non-stick skillet, cook the chickpeas over medium heat for 7-8 minutes, stirring frequently, until crispy and browned.
- In a small bowl, whisk together the Greek yogurt, remaining olive oil, and remaining za’atar seasoning.
- Divide the lettuce into two bowls.
- Top with chickpeas, cucumbers, tomatoes, red onion, feta, and parsley.
- Drizzle with yogurt sauce and additional olive oil, if desired.
How to Reheat Leftover Chickpeas
A lot of people have asked me how to keep chickpeas crispy after baking. As they cool, they’ll start to soften. To make them crispy again, put them back in a skillet on the stovetop or toss them in the air fryer. You’ll only need to cook them for a minute or two to restore their crispiness!
