I’m kicking off a new series called Dinner Hacks, which will help you get dinner on the table faster, with a few little shortcuts. The shortcut for this particular recipe is a jar of Thai yellow curry sauce. You’ll also need ramen noodles. I like using Ocean’s Halo’s ramen noodles which are organic, and they’re small enough that they soften quickly.

The Best Vegetables for Yellow Curry

For the vegetables, you can use almost anything you have on hand. My favorites are red bell pepper, carrots, and broccoli. Be sure to cut the vegetables into small, even pieces so they cook quickly. The bell pepper and broccoli should be chopped into 1″ pieces. Carrots should be finely chopped. You can also add green beans, peas, cauliflower, or onion. Almost any vegetable will work well in this dish!

How to Make Yellow Curry Noodles

Heat 1 tablespoon of olive oil in a large skillet and add the vegetables. Cook for 3-4 minutes until bright green.

Add 2 cups of Thai yellow curry sauce, 2 cups of vegetable broth, and 8oz ramen noodles.

Cook for 5 minutes until the noodles have softened and the vegetables are tender. The sauce will thicken while cooking.

Serve immediately. If you’re not planning to eat this right away, I recommend reducing the cooking time to 3 minutes, as the noodles will continue to soften.

The Best Thai Yellow Curry Sauce

The best one I’ve tried is Yai’s Yellow Thai Coconut Curry Sauce but you can use any brand you like! I got the Yai’s brand from Thrive Market (<– affiliate link) but it’s also sold at Whole Foods, Sprouts, Meijers, and Fresh Market stores. This brand is vegan and paleo.

Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped into 1” pieces
  • 1 cup broccoli, chopped into 1” pieces
  • 1/2 cup carrots, diced
  • 8 oz ramen noodles (see note)
  • 2 cups vegetable broth
  • 2 cups Thai yellow curry sauce (see note)

Instructions

  1. In a large non-stick skillet, heat olive oil over medium heat for 30 seconds
  2. Add the bell pepper, broccoli, and carrots and cook, stirring frequently, for 5 minutes.
  3. Add the broth, curry sauce, and ramen noodles to the pan. Use a wooden spoon to break up the noodles and submerge them in the sauce.
  4. Cook over medium heat for 5-7 minutes until the noodles have softened.

Notes

I recommend Ocean’s Halo ramen. If you use a different brand, you may need to adjust the cooking time slightly.

I like Yai’s Yellow Thai Coconut Curry Sauce but you can use any brand you like!
