If you’ve been to my site before, then you know how much I love cottage cheese! While I don’t often eat it on its own, I love how it magically blends into pasta sauce, salad dressings, and dips. This recipe was based on my pesto dip, which is surprisingly easy and great for a healthy side dish! To make this one even more nutritious, I added a few handfuls of spinach right into the sauce. Trust me, no one will know!

The Best Flatbread Recipes

For the flatbread, I like Stonefire Flatbreads, but Aldi makes similar flatbreads that are great too! I buy them fresh and store them in my freezer so I always have them on hand. My Favorite Storebought Pesto

The real trick to this simple recipe is using prepared pesto. My favorite store bought pesto is Buitoni Pesto, which has a great flavor that tastes homemade. America’s Test Kitchen recommended it and I’m glad I tried it! It has a really well-balanced flavor, and it works great in this recipe. If you want to try making it yourself, try my walnut pesto!

How to Blend Cottage Cheese

Make sure you blend the cottage cheese really well so your pesto is nice and smooth. I used a mini food processor. You can also do this with an immersion blender. If you only have a large blender or food processor, you may want to blend 2 cups of cottage cheese before adding the pesto, then divide it in half. You can use one half in the sauce and save the other half for pizza crustpasta, or pancakes!

Description

Ingredients

  • 1/2 cup cottage cheese (I recommend 4% milkfat)
  • 1/4 cup pesto
  • 1/4 cup fresh spinach
  • 3oz fresh mozzarella or 1/2 cup shredded mozzarella
  • 1 flatbread (5″x 10″ size) or my cottage cheese pizza crust


Instructions

  1. Preheat oven to 450 degrees.
  2. Blend the cottage cheese and spinach in a blender or food processor and blend until smooth. 
  3. Stir in the pesto and blend until smooth.
  4. Spread the pesto mixture onto the flatbread and top with mozzarella.
  5. Place the pizza on a baking sheet and bake for 12-15 minutes or until the crust is golden brown.
