Am I the only one who sometimes craves gooey, melted mozzarella cheese, topped with salty Parmesan? I’m not the only one, right? You’re with me on this? Preferably served with a little spicy marinara? I love pizza, but sometimes I’m not in the mood for something so heavy. Plus, I’m always trying to find ways to sneak in more vegetables!

Benefits of Zucchini

Zucchini is a type of summer squash that is low in calories and high in nutrients. It is a good source of several vitamins and minerals, including vitamin C, potassium, and manganese. Its high fiber content may also help to keep you feeling full and satisfied. Some research suggests that zucchini may have anti-inflammatory properties, which could potentially help to reduce the risk of certain chronic diseases such as heart disease and diabetes. I love that it makes a great base for my favorite pizza toppings!

Tips for Buying Zucchini

Here are a few tips for selecting zucchini at the store:

  1. Look for zucchini that are firm to the touch and free of blemishes or soft spots.
  2. Consider the size of the zucchini. Smaller zucchini tend to be more tender and have a sweeter flavor than larger ones. Plus, they have less seeds so they’re less watery.
  3. Avoid zucchini that are soft or shriveled, as they are likely past their prime and may not have the best flavor.
  4. If you are making lots of zucchini pizza boats, look for zucchini that evenly sized, so they’ll cook at the same rate.
  5. Remember to handle zucchini with care, as they can be delicate and bruise easily. Store zucchini in the refrigerator to help them stay fresh, and use them within a few days of purchasing for the best flavor and quality.

Variations and Substitutions

Feel free to get creative with your pizza toppings! You could add extra veggies on top like diced tomatoes and sautèd peppers and onions. Or add a crunch with toasted pine nuts and a swirl of pesto. You could switch up the sauce with a creamy white sauce for the base or top it with sun-dried tomatoes instead of pizza sauce!

Frequently Asked Questions

  • Can I make these in the air fryer? Yes! You may need to adjust the cooking time as most things cook much faster in the air fryer. I would start with 4 minutes and adjust as needed.
  • Can I make this recipe vegan? Yes! Simply use vegan cheese or omit the cheese and add your favorite toppings. I have lots of suggestions listed above.
  • Is this recipe healthy? Yes! This recipe is low in calories but high in nutrients. You can reduce the amount of cheese to make this recipe lower in fat, if desired.
  • How should I store leftovers? This recipe is best eaten right away as the zucchini can get soggy when reheated. I recommend eating it immediately. This recipe just serves one, so it’s not designed for leftovers.

  • 1 medium zucchini, sliced length-wise
  • 1/2 cup pizza sauce or marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon shredded Parmesan cheese

  1. Preheat oven to 350 degrees.
  2. Using a spoon, gently scrape out the insides of the zucchini. You don’t want to scrape it all out, just the seedy, soft, inside. You should still have a lot of zucchini left. You’re just making a spot for sauce!
  3. Spoon the marinara sauce into the scooped out zucchini.
  4. Top with mozzarella and parmesan cheese
  5. Bake for 25-30 minutes, or until the cheese is bubbly and brown. Serve!
