- 1 medium zucchini, sliced length-wise
- 1/2 cup pizza sauce or marinara sauce
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon shredded Parmesan cheese
Instructions
- Preheat oven to 350 degrees.
- Using a spoon, gently scrape out the insides of the zucchini. You don’t want to scrape it all out, just the seedy, soft, inside. You should still have a lot of zucchini left. You’re just making a spot for sauce!
- Spoon the marinara sauce into the scooped out zucchini.
- Top with mozzarella and parmesan cheese
- Bake for 25-30 minutes, or until the cheese is bubbly and brown. Serve!
