Looking for a delicious and easy breakfast recipe? This dump and bake casserole is just what you need! With minimal prep and simple ingredients, you can whip up a satisfying breakfast that’s perfect for busy mornings or a laid-back weekend brunch. This casserole combines crispy tater tots, black beans, eggs, and cheese for a dish that will become a brunch favorite.
Ingredients & Substitutions
Eggs – The base of this casserole is made with eggs, providing lots of protein. If you don’t like eggs, try this recipe instead.
Milk – A bit of milk helps to create a creamy, fluffy texture in the casserole. I used 1% milk, but any type of milk will work.
Taco Seasoning – This adds a flavorful kick to the casserole. Feel free to adjust the amount or use a homemade seasoning blend to suit your taste. I used a low sodium variety.
Black Beans – Canned black beans are a convenient way to add protein and fiber. You can substitute with pinto beans.
Cheese – A shredded Mexican cheese blend melts beautifully and adds richness to the casserole. You can use cheddar, Monterey Jack, or even a dairy-free cheese if you prefer.
Tater Tots – These crispy potato bites form the top layer of the casserole. If you have leftover tots, try my vegetarian tater tot bake!
