Ingredients
- 6 large eggs
- 1/3 cup milk (I used 1%)
- 1 tablespoon taco seasoning
- 1 (15oz) can black beans, rinsed and drained
- 1 1/4 cups shredded Mexican cheese blend, divided
- 16-ounce bag frozen tater tots
- Optional toppings: cilantro sauce, salsa, etc.
Instructions
- Preheat the oven to 400 degrees and spray an 8×8 inch baking dish with non-stick cooking spray.
- In the prepared dish, whisk together the eggs, milk, and taco seasoning until well combined.
- Stir in half of the shredded cheese and the black beans.
- Add the tater tots on top of the egg mixture, spreading them out in a single layer.
- Top with remaining cheese and cover tightly with aluminum foil.
- Bake for 45-50 minutes, or until the egg mixture is set.
- Remove the foil and continue to bake for 8-10 minutes until the cheese is brown on top.
