Description

This vegetarian breakfast casserole is a hearty and delicious meal that’s perfect for any morning. With minimal prep and easy cleanup, you just mix everything in the baking dish and pop it in the oven!


Ingredients

  • 6 large eggs
  • 1/3 cup milk (I used 1%)
  • 1 tablespoon taco seasoning
  • 1 (15oz) can black beans, rinsed and drained
  • 1 1/4 cups shredded Mexican cheese blend, divided
  • 16-ounce bag frozen tater tots
  • Optional toppings: cilantro sauce, salsa, etc.

Instructions

  1. Preheat the oven to 400 degrees and spray an 8×8 inch baking dish with non-stick cooking spray.
  2. In the prepared dish, whisk together the eggs, milk, and taco seasoning until well combined.
  3. Stir in half of the shredded cheese and the black beans.
  4. Add the tater tots on top of the egg mixture, spreading them out in a single layer.
  5. Top with remaining cheese and cover tightly with aluminum foil.
  6. Bake for 45-50 minutes, or until the egg mixture is set.
  7. Remove the foil and continue to bake for 8-10 minutes until the cheese is brown on top.
  8. Let the casserole sit for a few minutes before serving. Enjoy with your favorite toppings!
