Savory Granola Substitution Ideas

  • You can substitute the almonds for a different nut (I would suggest chopping larger nuts like walnuts or pecans), or substitute with more seeds if there is a nut allergy.
  • Feel free to use any combination of nuts and/or seeds you like, just make sure you keep the total volume to about 2 ½ cups.
  • You could leave out the egg white if there is an allergy, but your granola won’t stick together in clumps but instead be more like a loose cereal.

Ingredients

  • 1 ½ cups old fashioned oats
  • 1 cup slivered almonds
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • ¼ cup sesame seeds
  • ¼ cup flax seeds
  • 1 ½ teaspoons salt
  • ½ teaspoon chili powder
  • 1 ½ teaspoons fennel seeds
  • ⅓ cup olive oil
  • 1 egg white, beaten
  • 1 tablespoon maple syrup

Instructions

  1. Preheat oven to 350°F.  Mix all ingredients together in a large bowl.
  2. Spread out mixture onto a rimmed baking sheet. Bake for 20 minutes, stirring halfway through, until starting to brown.
  3. Allow to cool, then store in an air-tight container at room temperature.
