Healthy Cookie Dough Bites
These vegan cookie dough bites are made with healthy ingredients for a tasty treat that is packed with peanut butter and chocolate! If you need an easy dessert recipe to satisfy your sweet tooth, this is the answer!
If a cookie recipe says it makes 24 cookies, then it really only makes 20… because I’ll eat at least four cookies worth of dough. I mean, the cookie dough is the best part. So when my sweet tooth was calling last night, I decided to skip the whole preheating-the-oven thing and make some little cookie dough balls that could be enjoyed straight from the fridge!
To make these cookie dough bites, begin by melting the peanut butter, honey, and coconut oil and stir until mixed.
Add the oats and stir until combined. Be sure the mixture is cool before adding the chocolate chips. (I’ve made that mistake before, and I ended up with chocolate cookies! It wasn’t the worst mistake, but be sure it’s cooled if you want to keep the chocolate chips as chips!)
It helps to let the dough chill in the refrigerator for a few minutes before trying to roll into balls. This will allow the dough firm up slightly and make it easier to roll into uniform balls.
Substitution Ideas
You can make all different types of cookie dough bites just by making a few simple swaps:
- Use almond butter or cashew butter instead of peanut butter
- Swap the chocolate chips for raisins for an oatmeal cookie taste
- Try finely chopped pecans instead of chocolate chips
How to Store Cookie Dough Bites
Be sure to store your cookie dough bites in the refrigerator or freezer. They’ll last up to 1 week in the fridge or 1 month in the freezer. Because these are made with coconut oil, they’ll start to soften if left at room temperature too long. If they start to get sticky, just put them back in the refrigerator or freezer until set.

Ingredients
- 1 cup of rolled oats (see note)
- 1 tablespoon agave (or honey, if not vegan)
- 2 tablespoons coconut oil
- 1/4 cup crunchy peanut butter, unsalted
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 2 tablespoons mini chocolate chips
Instructions
- If you’re using whole grain oats, pulse them in a food processor for a bit to turn it into a coarse flour. If you’re using quick cooking oats, then you can just leave them as-is.
- In a small microwave-safe bowl, heat the honey, coconut oil, and peanut butter for 15 seconds at a time, stirring each time until just melted.
- Stir in the oats, vanilla, and salt.
- Once the mixture is completely cooled, add the chocolate chips.
- Place the dough in the refrigerator for a few minutes until it begins to set slightly, then roll into individual balls.
- Let them set in the refrigerator or freezer for at least 15 minutes before eating.
- Store in an air-tight container in the refrigerator.
Notes

YUM! Cookie dough, to me, is always better than the baked version 🙂 I’ve been making these vegan cookie dough balls since Christmas and keeping them in the freezer so I can enjoy them anytime I want! They’re made of chickpeas?! Go figure 😉

Cookie dough is the bomb.com!! I usually don’t eat raw cookie dough because there’s raw eggs in it (and I get slightly paranoid), but this recipe looks PERFECT! I have all those ingredients, too…can’t wait to try it.
