Lemon Pie Energy Bites

I love these bites because they’re super simple to make, and they’re an excellent snack for busy days! The dates provide lots of sweetness, and the nuts give you the protein and fiber you need to stay energized and satisfied.
Tips for perfect energy bites
- Make sure you use pitted dates! Or if you can’t find pitted dates, remove the pits before blending.
- You can use raw or roasted nuts. Keep in mind if your nuts are salted, you won’t need to add salt. If they’re unsalted, a pinch of salt will be required.
- If you want a boost of lemon flavor, you can also add 1/4 teaspoon of lemon zest.
How to blend energy bites
The mixture is sticky, so it’s best to do it in a food processor. You could do it in a blender, but it’s more likely to get jammed. I’d recommend doing a half batch if you want to try it in a blender. It wouldn’t recommend trying this in a bullet style blender. Here are my tips for getting the most of your blender!
Energy bite variations
The dates tend to make these energy bites a bit sticky, so I like to roll them in a bit of almond flour. You could also roll them in a bit of coconut for a more tropical vibe! If you don’t want to coat them with anything, be sure to store them in a large container so they don’t stick together.
How to store energy bites
I recommend storing these bites in an airtight container in the refrigerator. They should last 4-5 days. If they’re rolled in a coating, you can store them in a zipper-top bag, without having to worry about them sticking together.

Ingredients
- 1⁄2 cup cashews
- 1⁄2 cup almonds
- 1⁄2 cup dates
- 1 tablespoon freshly squeezed lemon juice
- 3⁄4 teaspoon pure vanilla extract
- Pinch of salt (optional if nuts are unsalted)
- Almond flour or unsweetened shredded coconut, for rolling (optional)
Instructions
- Put the cashews, almonds, and dates in a blender or food processor and blend for 30 seconds.
- Add the lemon juice and vanilla, and continue to blend until incorporated. You may need to scrape down the sides with a rubber spatula.
- Carefully transfer the mixture to a piece of parchment paper. Separate the mixture into rounded tablespoons and roll into 1-inch balls.
- If they’re sticky, you can roll them in almond flour or shredded coconut.
- Store the bites in an airtight container in the refrigerator for up to 1 week.
