I love simple recipes and this is one of the easiest I’ve ever made! Despite how effortless they are, these little chocolate covered apricots feel a little bit fancy. I think they’d be the perfect dessert for a dinner party or to add to a cheeseboard. They’re such a fun pop of color!

The Best Dried Apricots

Apricots are a type of stone fruit, similar to peaches and nectarines. I prefer using Turkish apricots, which are dried whole, then pitted. They’re a yellowish-orange color, like the ones seen here. You can also use California apricots, which are halved before drying. You can read more about the differences here.

You can typically find dried apricots at the grocery store near the nuts and dried fruit. You may also find them in the bulk bins or on Amazon. Be sure there’s nothing added to the apricots, like sugar or other sweeteners. Apricots are plenty sweet on their own!

Chocolate Covered Apricot Ingredients

  • Chocolate chips– I prefer dark chocolate chips but semi-sweet chocolate chips are great too!
  • Dried apricots– Be sure they’re not sweetened. Look for 100% dried apricots with no added sugar.
  • Shelled Pistachios– I prefer roasted and salted pistachios. You can chop them on a cutting board with a knife if your pistachios are whole.
  • Sea salt- This is optional, but if your pistachios are unsalted I recommend sprinkling the chocolate covered apricots with a pinch of flaky sea salt.

How to Make Chocolate Covered Apricots

Add the chocolate chips to a microwave-safe bowl. Microwave at 50% power for 2-3 minutes, stirring frequently until melted. Be sure to cook slowly at a low temperature so the chocolate doesn’t burn.

Dip each dried apricot into the chocolate, about halfway up the apricot.

Dip the chocolate-covered part of the apricot into the chopped pistachios.

Place the apricots on a parchment paper lined tray.

Refrigerate until chocolate is set.

How to Store Chocolate Covered Apricots

Keep these in an airtight container in the fridge. The chocolate may get a bit sticky if the temperatures are warm, so it’s best to keep it in the fridge.
