Sometimes I make a recipe that is so simple, that I wonder if it’s worth the recipe. But I realized that many of you are like me and you’re looking for really easy ways to get dinner on the table! This is one of those recipes that you can throw together in minutes which is perfect for busy weeknights!

The Best Pesto for Flatbread

The trick is to use some shortcuts like frozen flatbread and prepared pesto. Of course, you can make these things from scratch if you like, but I prefer to use storebought to keep things simple! My favorite store-bought pesto is Buitoni’s Pesto which has a great flavor that tastes homemade. America’s Test Kitchen recommended it and I’m glad I tried it! Of course, you can make your own pesto if you like.

The Best Flatbread Recipes

For the flatbread, I like Stonefire Flatbreads, but Aldi makes similar flatbreads that are great too! I buy them fresh and store them in my freezer so I always have them on hand. If you want to make your own flatbread, try my easy flatbread dough recipe or my 2 ingredient pizza crust recipe.

Tips & Tricks

  • For a crispier crust, bake the flatbread directly on the oven rack. I recommend placing a baking sheet on the rack below, to catch any cheese that may fall off.
  • You can also add other vegetables to this flatbread if you like! Try adding some chopped artichokes or a sprinkle of black olives. Or add a handful of arugula on top just after baking.
  • I used cherry tomatoes but you can also use regular tomatoes. Just chop a slicing tomato into small pieces, drain any excess juice, then add the chopped tomato on top. You could also substitute sundried tomatoes, which would be delicious on this flatbread!
  • This recipe works best with low moisture fresh mozzarella cheese, but shredded mozzarella is fine, too.

Ingredients

  • 1 flatbread (roughly 5 x 10 inches)
  • 1/4 cup prepared pesto
  • 4 oz fresh mozzarella cheese
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat oven to 450 degrees.
  2. Spread the pesto on the flatbread and top with mozzarella cheese and cherry tomatoes.
  3. Place the pizza on a baking sheet and bake for 12-15 minutes or until the crust is golden brown.
