Broccoli Cheddar Soup

I tried Broccoli Cheddar Soup for the first time just a few years ago. Partly due to my unwillingness to try anything new when I was younger, and partly due to my aversion of “creamy” soups when I was older. Needless to say, I wish I had tried it awhile ago because it’s quite delicious. It’s certainly not winning awards for the healthiest soup on earth but it doesn’t have to be a nutritional disaster to be tasty.

When I opened Alex’s fridge yesterday and saw a few crowns of broccoli I figured this was my chance to give it a try. Since spring seems a little shy to come out these days, the cooler Easter afternoon seemed like a good occasion for soup. Eaten with some of our leftovers from Ipanema cafe, we enjoyed this  broccoli cheddar soup while sunshine streamed in through the windows before we set off for church.

  • 1 large head of broccoli
  • ½ white onion
  • 2 cups vegetable broth
  • 4 cups skim milk, divided
  • 1 tbsp butter
  • ¼ cup flour
  • 1½ cups sharp cheddar cheese
  • ¼ tsp garlic salt
  • salt & pepper to taste
  1. Roughly chop the broccoli and dice the onion.
  2. Add the broccoli, onion, vegetable broth, and 2 cups of milk into a large pot and bring to a simmer.
  3. In a separate sauce pan, melt the butter over low heat and whisk with 1 cup of milk until combined.
  4. Over medium heat, whisk in the flour and 1 cup milk.
  5. Remove from heat and stir in the shredded cheese. You might have to stir for awhile for it to melt completely.
  6. The broccoli & onions should simmer for about 10 minutes, until soft. Once soft, add in the cheese mixture and continue to cook over low heat for a few minutes.
  7. You can blend it if you want, or eat it as-is.

I don’t have my blender at Alex’s apartment, so we left the soup chunky and I kind of like it that way. It makes the soup feel a little more substantial.


Sure, it’s not the healthiest soup in the world, but it makes about 6 servings, with around 200 calories per serving. Definitely not terrible, slightly better than Panera’s broccoli cheddar soup, to give you an idea. I’m sure I’ll make this again when I have some extra broccoli in the fridge!

  1. I’m mixed when it comes to broccoli & cheddar soup. From all the bowls I’ve tried, I’ve had both good & bad. So to answer your question, I just don’t know LOL. Yours looks fabulous though 🙂

  2. This sounds good! I just made soup over the weekend with a blended mix of cauliflower and broccoli for the base then added other veggies and Parmesan cheese mixed in for flavour. So yes I have to say I am a fan but I’ve never had it with cheddar and just broccoli before but it looks and sounds yum!

    • Ohhh yum! I think blended cauliflower would be a great way to make soups a little thicker! If I had some on hand, I would have tried it in this recipe! I’ll definitely have to try it next time 🙂

  3. I love this soup! It’s a great fav even though its typically not good for you and thus I get it/make it a couple times a year. I had it recently at panera. Great, but salty.

  4. Yumm, looks great! I haven’t had broccoli-cheddar soup in forever. I tend to gravitate towards more brothy soups, but sometimes you just want something creamy!

  5. When I was a picky eater and thought vegetables were horrible I wouldn’t eat a broccoli soup. Now I’ve tried two or three times and I do like it. I haven’t cooked it myself, and I know is not the healthiest one on earth, but every now and then 😛 maybe a vegan option would be tasty too
