This hearty tomato and rice soup is an easy and budget-friendly dinner idea! With just a few pantry staples, this recipe comes together quickly.
This tomato and rice soup is super filling and packed with healthy ingredients. It sticks to your ribs a little more than a bowl of standard tomato soup, but it doesn’t require any crazy ingredients. I kept it super simple with just pantry staples but if you want to take it to the next level, I recommend blending in a few ounces of cream cheese or adding a sprinkle of Parmesan cheese.
How to Make Tomato and Rice Soup
I’ve made lots of variations of tomato soup over the past year or two, but the addition of brown rice takes it from a side dish to the main dish. This is also a very economical soup as all of the ingredients are quite inexpensive. If you’re making a large batch for a group and you’re on a budget, try this one out.
Just a few pantry staples can be transformed into delicious tomato soup while your rice cooks at the same time.

I’m all for economical right now with the overwhelming cost of a wedding. That, and I’m craving soup so this recipe looks perfect! I like both chunky and pureed soup. Pretty much anything meatless and I’m good! 😉
I’m all about soups in the winter (I’ll take a cold soup in the summer too!) I love how simple this recipe is. I’m trying to think if I have the ingredients to make it when I get home! I may have to stop for a can of tomato paste but I think I have everything else! 🙂 Also, I usually prefer chunky soup! I had a sweet potato and black bean soup last night that was EXCELLENT!
im always up for a bowl of soup. I like adding grains to make it bulky and sometimes sneak in frozen veggies 🙂

This recipe made me so happy. I am not a fan of puréed tomato soups (I have no clue why – I love tomatoes.. all things tomato) but I just can’t do that consistency. This would solve everything! And it definitely looks like an inexpensive recipe. Bookmarking this one!
