Alex and I waited until Saturday to officially celebrate my birthday and he had quite a day of surprises planned. We started off the day with coffee and the newspaper (I love the newspaper) which I read while he made me an omelet. (Heavy on the veggies, light on the egg, just the way I like it!!) It was the perfect fuel before our first activity, which he warned me would involve a bit of a workout.
He got us tickets to Jumpology, a local indoor trampoline park! How could you not love that? You’re never too old for trampolines. This is Alex shooting hoops, and me backflipping into the foam pit.
When we got back to Alex’s apartment, he had picked out some recipes From my Pinterest board and got all the ingredients to make them! I was so excited. Crossing things off my Pinterest list is so satisfying, and not having to shop for the ingredients was even better!
We made these black bean & feta tacos, with a honey lime sauce. These were pretty easy to make and we stuck to the recipe except we doubled the amount of black beans. We also made these amazing seasoned sweet potato fries. Oh my gosh, you know I love sweet potato fries but these are beyond delicious. Go check out those recipes!
Served with some of this blackberry sangria, it was an amazing Pinterest inspired lunch.
Bonus points to Alex for thinking of looking at my Pinterest boards for lunch ideas. He also got me an adorable apron from Anthropologie, which is so cute, I’ll feel bad every time I spill flour on it 😉 I foresee a lot of baking in my future.
We relaxed in the afternoon and then went to a new-to-us pizza place for dinner, 23rd & Main Taproom. I love trying new restaurants and we split a white pizza for dinner.
It wasn’t too oily, which was nice and despite the humidity, we enjoyed our dinner on the patio. After dinner, we took a long walk and got a little frozen yogurt while we watched a movie. It was honestly the perfect birthday! A combination of exercise, relaxation, and delicious food! Well done, Alex 😉
