Air Fryer Zucchini

I love this air fryer zucchini recipe because it only takes a few minutes to assemble so it’s ready in no time. If I find myself with an extra zucchini in the fridge, I know I can transform it into a healthy side dish for our dinner. It’s delicious with pasta, veggie burgers or just about any main dish you’re serving!

If you’re new to cooking with an air fryer, think of it like a convection-style oven. Hot air circulates around a metal basket which creates a crispy outer layer. How to Make Zucchini in an Air Fryer
Cut the zucchini into 1/4″ coins. You do not need to peel the zucchini. Spread them onto a paper towel or clean kitchen towel and sprinkle with salt. Let them sit while the air fryer preheats. This will help draw out some of the moisture. After a few minutes, pat the zucchini dry. Then toss the zucchini coins in olive oil and season with garlic powder, salt, and pepper.
Lay the zucchini in a single layer in the air fryer basket and cook for 5-7 minutes until browned.
Tips & Tricks
- Try to cut the zucchini into evenly sized pieces so they all cook at the same rate.
- When picking out a zucchini, look for smaller-sized squash which will have less seeds and therefore be less watery. Larger zucchinis will have more water and can be a bit soggy. The smaller the squash, the better!
- Don’t crowd the fryer basket. If you have a small air fryer, you may need to cook the zucchini in two batches. The goal is to have the zucchini in a single layer with no overlapping.
When is Zucchini in Season?
Zucchini is technically in season from June to August, but you can find it year-round at the grocery store. If you have a garden, you probably know that a zucchini plant can produce a lot of zucchini. Can I Double the Recipe?
Yes! You can double the recipe but you may need to cook the zucchini in batches unless you have an extra-large air fryer. You don’t want to crowd the basket or the zucchini will get soggy.
Dipping Sauces & Serving Suggestions
This zucchini is delicious on its own but you can also spice it up with seasonings and sauces. I love adding a sprinkle of crushed red pepper flakes and Parmesan cheese. If you want to serve it with a sauce, I recommend a marinara sauce for dipping. For a creamy sauce, whip up a simple aioli. Whisk together 2 tablespoons of mayonnaise, 1/2 teaspoon of lemon juice, 1/4 teaspoon of garlic powder, a pinch of black pepper, and 1 tablespoon of water. Drizzle over the zucchini or use it as a dipping sauce.

Ingredients
- 1 large or 2 small zucchinis, sliced into 1/4” coins
- 2 teaspoons olive oil
- 1/4 teaspoon garlic powder
- Salt & pepper to taste
Instructions
- Preheat the air fryer to 390 degrees.
- While the air fryer is preheating, spread the zucchini coins onto a paper towel or clean kitchen towel and sprinkle with salt. This will help draw out some of the moisture. After a few minutes, pat them dry.
- Toss the zucchini coins in olive oil and season with garlic powder, salt, and pepper.
- Place the zucchini in a single layer in the air fryer basket. You may need to cook it in two batches, depending on how much zucchini you’re making. Avoid overlapping the zucchini, which can make it soggy.
- Cook for 5-7 minutes until browned.
- Add additional salt to taste, if needed.
