Description

This simple air fry zucchini recipe is a delicious side dish that’s ready in just a few minutes! You only need a handful of ingredients and this recipe makes a great side to your favorite protein!


Ingredients

Scale
  • 1 large or 2 small zucchinis, sliced into 1/4” coins
  • 2 teaspoons olive oil
  • 1/4 teaspoon garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat the air fryer to 390 degrees.
  2. While the air fryer is preheating, spread the zucchini coins onto a paper towel or clean kitchen towel and sprinkle with salt. This will help draw out some of the moisture. After a few minutes, pat them dry.
  3. Toss the zucchini coins in olive oil and season with garlic powder, salt, and pepper.
  4. Place the zucchini in a single layer in the air fryer basket. You may need to cook it in two batches, depending on how much zucchini you’re making. Avoid overlapping the zucchini, which can make it soggy.
  5. Cook for 5-7 minutes until browned.
  6. Add additional salt to taste, if needed.
