I had so much fun planning a date night for Alex and I and I wanted to make a dessert that would pair well with our dinner menu! We enjoyed lentil tacos and Mexican Street Corn Salad and I wanted to keep the theme going! I decided to create a single serving brownie recipe but borrow some of the flavors of Mexican Hot Chocolate.

Description
This single serving brownie includes a dash of chili powder for a little bit of spicy flavor that enhances the chocolatey taste!
Ingredients
- 1/4 cup flour
- 3 tablespoons granulated sugar
- 1/4 teaspoon baking powder
- 2 tablespoons cocoa powder
- 1 1/2 tablespoons butter, melted
- 2 tablespoons milk
- 1/4 teaspoon vanilla
- 1/4 teaspoon cinnamon
- Dash of chili powder
- Dash of sea salt on top
Instructions
- Mix all the ingredients in a small, microwave-safe ramekin or mug.
- Microwave for 45 seconds or until just set.
- Microwave times can vary, so you may need to cook for an additional 15-30 seconds.
It was a little crumbly (so you might make a bit of a mess while eating it) but Alex and I both really liked it. It was the perfect dessert to share on the couch- no leftovers! Of course, the next day I wished I had something sweet to snack on… but Alex and I made banana bread over the weekend, so at least I’ve got that to keep my sweet tooth occupied.
I needed to add another 2.5 T butter and 1 T water because it was still just a powder when I mixed the ingredients. It was also too much to put in a ramekin so I kept it in the small bowl. Was great once I got it right!

I totally know what you mean when you say you eat the entire tray of brownies if they are there. I tend to be the same way and sometimes add the excuse that I don’t want it to go to waste. Single serving desserts make me feel better for being single 😉 . So yes, I’ve made quite a few before – including your apple crumble but you knew that already. I’m a fan of Lindt’s Chili bar so – Mexican or not – a spicy chocolate brownie sounds really good to me.
I need to make more desserts that guarantee no leftovers! Vishnu and I are known to polish off entire trays of baked goods in 24-48 hours!
