One of my summer goals was to keep going on “dates” with my new husband. We certainly achieved that with a busy day on Saturday, but I decided not to wait until the weekend for another date. I e-mailed Alex a calendar invite (because that’s what we do) to warn him that there would be a fiesta happening at our apartment. Then I got to work.
I put on a Spanish music playlist on Spotify, grabbed chips and guacamole, roasted some chickpeas, and whipped up some margaritas. I wanted to keep this lower in sugar (since I had a dessert plan in mind) so I used frozen mango chunks and orange juice rather than a high-fructose-corn-syrup laden margarita mix. Even if tequila isn’t your thing, these would be delicious mock-tails sans liquor.
Here’s what you need for some delicious “skinny margaritas”:Print
Do not use fine sea salt crystals. The finer the crystals, the saltier it tastes so make sure you use coarse sea salt. Not that we would know this from experience or anything.
Frozen Mango Skinny Margaritas
- 1 cup frozen mango chunks
- 1 cup ice
- 1/2 cup orange juice
- 2 shots of tequila
- Salt for the rim!
Blend it up and serve it cold!
