Single Serving Mexican Brownie

I had so much fun planning a date night for Alex and I and I wanted to make a dessert that would pair well with our dinner menu! We enjoyed lentil tacos and Mexican Street Corn Salad and I wanted to keep the theme going! I decided to create a single serving brownie recipe but borrow some of the flavors of Mexican Hot Chocolate.

Description
This single serving brownie includes a dash of chili powder for a little bit of spicy flavor that enhances the chocolatey taste!
Ingredients
- 1/4 cup flour
- 3 tablespoons granulated sugar
- 1/4 teaspoon baking powder
- 2 tablespoons cocoa powder
- 1 1/2 tablespoons butter, melted
- 2 tablespoons milk
- 1/4 teaspoon vanilla
- 1/4 teaspoon cinnamon
- Dash of chili powder
- Dash of sea salt on top
Instructions
- Mix all the ingredients in a small, microwave-safe ramekin or mug.
- Microwave for 45 seconds or until just set.
- Microwave times can vary, so you may need to cook for an additional 15-30 seconds.
It was a little crumbly (so you might make a bit of a mess while eating it) but Alex and I both really liked it. It was the perfect dessert to share on the couch- no leftovers! Of course, the next day I wished I had something sweet to snack on… but Alex and I made banana bread over the weekend, so at least I’ve got that to keep my sweet tooth occupied.
Love it!! But I have a question, is there any substitution for the butter? Now I want a single serving chocolate cake!!
If you want to make it vegan, I’m sure Earth Balance would work well, and you could probably try coconut oil!
Love this idea! I tried to make a single-serving cake once and it did not taste good. Too spongey, or something? But this sounds delicious and I trust your sweet tooth 🙂
I know what you mean! I’ve made some “healthy” ones that were a little spongey. Maybe it was egg whites?

Adding egg would probably help the crumbly-ness since it is a binding agent… but I would have no clue how much. Certainly a whole egg would be overkill…

I’m not sure if I could share that 😉 Looks really good. I love single serving desserts! I much prefer to not have a huge pan of brownies laying around to nibble on all week (or, in my case, a couple of days!)
Totally agree about a jam-packed weekend- when the weather is this gorgeous, you have to make the most of it! I love Jenga, too 🙂 We went down to Brooklyn for an overnight and got sunburned and exhausted but had so much fun.

Single serving recipes are ideal for me. In fact the majority of things I make are single serving!
I do the same thing with picking at sweets and it drives my husband nuts. Love that this has a little kick to it!
