Rosemary Roasted Almonds

When Alex and I first became friends, one of the first things I noticed about him was his almond eating habit. I know that sounds totally weird and bizarre but our friendship was started over lunches in the cafeteria at work and I’m kind of food-obsessed, so I found his almond addiction adorable. (Alex, have I totally embarrassed you yet?) I learned that he was trying to lower his cholesterol which was obviously a subject I found interesting. I would also like to note that after a year of dating me, his cholesterol went down 30% and he’s now in the totally normal range. Coincidence? Hm.

Anyways, I remember he would always have wasabi roasted almonds which I’d never tried before. I’m not a huge fan of wasabi but I love the idea of infusing flavor in almonds by roasting them. I’ve never really tried it so when I found myself with leftover rosemary from the Goat Cheese Mashed Potato recipe, I figured I’d give it a shot.

It worked beautifully.

These made the kitchen smell so amazing, it was worth heating up the oven on an hot afternoon. I packed some up in a mason jar and put them in my purse for snacking all weekend. Good bye boring almonds.

Spice up your almonds with rosemary! These roasted almonds are addictive, which is fine since they're loaded with healthy fat and protein! These are vegan & gluten free!

Almonds, cashews, peanuts… which is your favorite?

  1. I’m really loving snacking on Californian almonds at the moment, so yummy! Love idea of using rosemary as a flavouring.

  2. I love almonds, so I definitely need to give these a try! It’d be nice to mix it up from the plain ole dry roasted ones!

  3. Love this flavor combo! Vishnu also loves almonds and can polish off an entire batch in one sitting.

And yay for a positive change in Alex’s cholesterol – that’s great news!!

  4. Ooh what a great idea! I have some fresh rosemary out back and when I make those mashed potatoes, I’m making some of these babies too!

  5. I love a good flavored almond! However, when it comes to eating nuts plain, cashews win for me.

  6. I love seasoned almonds, especially when you season them yourself. Do you think this would work with crushed rosemary. If so, how much do you think would be sufficient? 2 Tbsp, perhaps?

  7. Wow, good for Alex! You gotta love a snack that can lower your cholesterol and taste amazing. These sound amazing with rosemary!

  8. Wow, this sounds absolutely delicious! My tummy is actually rumbling. I’m a sucker for anything that involves nuts. And rosemary sounds like the most perfect pairing. I also notice food waayyy too much, so I would have noticed an almond eating habit pretty quickly, too. 😉

  9. Did your handsome husband not tell you that his mother lowered her cholestrol 50 points and I contribute it to eating a handful of almonds everyday.

  10. Nooooo you can’t make me pick just one!! 😉
I adore almonds, but pistachios are probably my all time favorite. Although growing up, my daddy lived across the street from an almond orchard, so when they were harvesting, he and I would just walk over and pick up the almonds they had left behind on the ground. We’d peel them open and just eat fresh, raw almonds all summer long.
Oh and there may or may not have been walnuts down the street as well 🙂

  11. I just had a “duh” moment. Actually raw almonds by me cost less than roasted ones, and I always thought “why the fuque would I want raw almonds that taste like ass?!” ROAST THEM! Cannot wait to try this.

I found you through Carrie’s blog (Season It Already!)

  12. Love flavored almonds! Cocoa ones are my absolute favorite!

  13. I tend to go back and forth with nuts – one week I am in LOVE with one nut then I switch to another in a couple weeks – right now I’m stuck on CASHEWS – Oh my goodness I can’t get enough and just made cashew butter in my Ninja this past weekend. All the cashews!

  14. All of the above!
Blue Diamond makes rosemary and black pepper roasted almonds. So good!

  15. i love just about all nuts (pine, cashew, almond, peanut, you name it!) but jon is allergic, so it’s a treat i only get outside-the-house. a small price to pay, right? these photos are goooorgeous.

  16. It’s nearly impossible to find knowledgeable people for this topic, but you seem like you know what you’re talking about!

  17. This is a great idea. I try to snack on a few almonds in the morning…but I have to try this…never thought to flavor them 😀 …and I love, LOVE rosemary ^_^

    Thank you!

  18. LOVE this idea! I’m not a huge fan of plain almonds, though I do love a marcona almond. Rosemary, salt, and olive oil make everything better.
