[Low Cal] Creamy Peanut Butter Dip

I have a slight obsession.

If you’ve spent more than an hour or two with me, you’ll quickly learn I have an addition to peanut butter. Let’s not call it a problem. Because it’s so delicious, that seems unfair.

It only becomes a problem when I can’t talk my spoon out of taking a dip in the jar. Over and over.

Anyways.

We all know apples + peanut butter = amazingness.

The problem is, it takes like, 3 tbsp of peanut butter to sufficiently dip an entire apple. And while I love peanut butter, I do have to face the facts, that 1 measly tablespoon packs in 100 calories. Wow do those add up quickly. What’s a girl to do?

Whip up a batch of this creamy peanut butter dip, and start snacking!

Creamy Peanut Butter Dip

  • 3 tbsp greek yogurt (plain or vanilla can work)
  • 2 tbsp peanut flour (see note below)
  • pinch of salt
  • pinch of stevia (optional)

Note: If you can’t find peanut flour (or PB2) and you don’t feel like ordering it from Amazon, feel free to use regular peanut butter! It’ll be a little higher in fat and calories, but at least it’s good fat! You can reduce it down to 1 tbsp and it’ll still be super creamy and peanut butter-y.

Just mix all your ingredients together in a small dish, and start dipping! I also think this would be pretty good on toast, with pretzels, or… with a spoon ;)

Delicious.

I don’t know about you, but this week seemed to fly by. I’m happy it’s the weekend, but the weekdays we’re pretty fantastic on their own. On Wednesday, I did get a chance to go to Kuba Kuba, where I hadn’t been since my vegan days, (where the menu was a little more limiting…) so I was excited to try the Roasted Red Pepper and Asparagus Tortilla.

This spanish style omelete was delicious, especially with a little hot sauce on top. It was also super filling! I ended up taking half of it home for later. Our server was friendly, and it reminded me how happy I am to be in a city with so many great local spots. Richmond, you’re pretty great :)

Have you ever had Cuban food?

Comments

  1. i do a variation of this dip all the time – with chocolate PB@ and cocoa powder!! so great!

  2. Surprisingly, since I live in Florida, I have not had Cuban food! I’m not sure how vegetarian friendly most of it would be!

  3. Your PB dip sounds so good and Easy, Liz! Thanks for sharing it. That omelette looks incredible! I’ve never had Cuban food, I don’t think there are any restaurants around my area. I also always thought I couldn’t get veggie choices there. Good to know you can!! Have a great weekend, Liz!

  4. I am definitely going to be trying that PB dip. I use PB2 daily in smoothies, wraps, oatmeal, etc. Thanks for another great way to try it :-)

I haven’t ever eaten Cuban food, but that omelet looks fantastic.

  5. Love that dip! I made something very similar with PB2 a while back and loved it. And I’m with you on the PB obsession. If I don’t have even a little bit every day, it really feels like something is missing. :) Have a great weekend!

  6. I would like to come to Richmond and eat bucketfuls of this dip. Followed by an adventure to either the restaurant you just displayed…or any of the other fun veggie-friendly ones you’ve got over there in RVA. :)

  7. I’m obsessed with peanut butter lol this is a great idea! and I totally agree, apples + pb is the best combo ever haha

  8. Yum! I love recipes where you can double the PB for the same stats:) I’m obsessed with PB and J oatmeal!

  9. The boy and I totally passed by a cuban restaurant a few days ago and we both went “put it on the list” because we haven’t tried it yet… looks delicious!

  10. I am also a big fan of using peanut butter flour for a low cal PB dip. I like to add 1 tsp of PB to make it a bit creamier :)

  11. I for sure have an addiction, too. Any type of nut/seed butter though! Love it. This look so good – I love PB2!

  12. I absolutely love putting Peanut Flour in my yogurt! I’m especially a fan of adding a little cocoa powder, it is such a great snack when I’m craving froyo!

  13. fizzandfrosting says:

I am a peanut butter addict. This sounds like such a great solution to eating an entire jar!

  14. Oooh love this recipe. I’ve just ordered some peanut flour from Iherb so this is a nice coincidence! :)

  15. I also have a peanut butter addiction! I spread it on apples and have it with dates….as a treat….everyday. Yum, I must make this – thanks :)

  16. I have never thought to make a dip before, thanks for sharing! I am with you on the nut butter addiction, and the fact that you need 3 tablespoons for one slice, lol!

  17. Looks very tasty to me and I am not a peanut butter fan much myself!

  18. I was tempted to not read this because it sounded like it could be the most addictive thing ever haha. Good thing I just finished my yogurt today, or I could probably make this right now.

  19. yummy! I love PB and think it would make an awesome dip!
I have never had cuban food but I think I would LOVE it!

  20. I am addicted to peanut butter. No really. I am. I NEED to have at least a spoonful before bed. And I love Cuban food!!

  21. Oooh yogurt + PB… that’s not a bad idea, friend! I can see how it would make a great dip! :)

  22. I had Cuban food in CA and remember it being delicious.
Look at you with the fancy dip! Great idea to use Greek yogurt.
I firmly believe that peanut butter deserves its own food group in the food pyramid.

  23. Did someone say PEANUT BUTTER??? ;) Have you ever seen PB2? It is a powdered peanut butter that is perfect to use in dishes like this!! I love putting a scoop of pb in my greek yogurt to just eat by the spoonful. This is a PERFECT dip!!

  24. Hi! Now this is a great idea! Whether you are watching your weight or not, there is always a little bit of guilt when the spoon dives in to the PB jar for a repeat mouthful….thanks for sharing! I’ll deffo given this a go! :-)

  25. PB dip and apples- perfect snack!

  26. I make this dip all the time. Such a perfect snack with apples, pretzels, bananas.. whatever I feel like using =) Have a wonderful weekend.

  27. Another recipe of yours to obsess over :D

    Cheers
    CCU

  28. Yum! I make a similar dip with almond butter, greek yogurt, cinnamon and stevia. Sometimes when I’m super lazy and the hubby is gone, I’ll eat it a bowl of it with chopped apples for dinner!
I haven’t had cuban food for a long time but it’s good! I stayed in the Florida Key’s for a summer and ate lots of Cuban food. I worked at an Ihop while I was there and it was totally normal for folks to order a side of cuban style black beand and rice for breakfast!

  29. Your dip sounds delicious with yogurt. I am into chutneys and dips, in fact I can’t eat anything crunchy without a creamy dip.

  30. Your dip sounds delicious with yogurt in it. I make dips all the time to use where ever I need to.

  31. I don’t think sticking your spoon in the pb is a problem – it’s better than me sticking my finger in the jar… ;-)
That dip looks fab though and I bet the consistency’s much better for dipping apple than solid pb too. I’ve never had Cuban food but looking at your picture, am tempted!

  32. I adore Kuba Kuba, their plaintains are so good!!! This dish looks amazing as well, that place never disappoints :)

  33. Ooh! I have both Greek yogurt and PB2 right now!! Going to make this for breakfast tomorrow before school! I’ve actually never had cuban food..I know…this is not acceptable!

  34. whoa, i’m going to do some damage on that pb dip! hopefully it will replace the damage i was doing on the pb frosting. ;)
that omelete looks delicious! i’ve never had cuban food, but i feel like i would love the flavors.

  35. I love PB dip! Especially with apples. Great snack! :)

  36. I LOVE this idea. I think I have mentioned my peanut butter addiction before so I actually stopped buying it until I could get a grip on my serving size. It has been about two weeks so I finally bought a jar yesterday. I am hoping to keep this jar for more than a week (because I was having a difficult time doing so over the past coupe of months- ah); however, I LOVE the idea of making this dip because when my nine o’clock craving rolls around, I can snack on this without the guilt of too many TBSP of regular peanut butter :)

  37. This is great! I love peanut butter…. a little too much. I’ll find my self bingeing on it and it totally wrecks my diet! I have PB2 and this is a fantastic way to thicken it up (instead of water the greek yogurt) and have a delicious dip :)
