What I Ate Over the Weekend
I mentioned on Monday some of the things we were up to this weekend but today we’re just focusing on the food. I thought I’d show you what I ate on Saturday since I was trying to keep things clean, lean, and green. If you’re trying to eat a little healthier, my hope is that this will inspire you with some new ideas!
First up was breakfast. I was out later than usual on Friday night so I slept in a bit on Saturday. Once I got moving, I had a banana smoothie topped with chia seeds. I’ve been loving the addition of chia seeds because they help keep me full.
After breakfast I hit up Flow Cycle with my sister in law and then we met the rest of the family for Noodles & company. I went with the Bankok Curry Buff Bowl. The buff bowls are basically the noodles bowls but with spinach instead of noodles. As much as I love noodles, I did enjoy the extra veggies in here!
I’m not normally much of a tofu person but this tofu turned out to be really good! It wasn’t too soggy or mushy. Tofu can be a little tricky to get right, so I was pleasantly surprised with this.
Since it was Valentine’s Day weekend, we went to dinner a bit earlier than normal. We headed to Kuba Kuba (my favorite!) around 5:00 and got the last table in the restaurant! I didn’t even have it look at the menu before ordering.
I literally always get the avocado salad with a cup of black bean soup. Every single time. It’s just so tasty! And look at the colors in that salad!
After dinner we went back to my brothers house and played lots of Drawful. It was a good way to distract myself so I ended up not snacking after dinner. It helped that we ate a lot of dinner… so I was stuffed!

YUM! You’re making me hungry 🙂 I love smoothies so much but just don’t take the time to make them. Maybe I should do that this weekend when I don’t have to rush off to work.
LOVE Noodles and co! I adore their Bangkok Curry. Get the sauce on the side and you might just drink it! Not that I’ve done that before….
Look at that avocado- I’d totally choose that too if they served it like that (aka most places give you an unripe slice) lol!
This weekend I went to an Indian buffet and legit ate 3 chickens (throughout various curries lol!)
I love noodles and company! Sadly I no longer have one near me. They really need to come to Philly. Love the colors of that avocado salad as well

I’ve really got to try this smoothie in a bowl business. I love chia seeds- they really are so filling.
I didn’t know Noodles & Company did salad bowls! How fun! I don’t live near one anymore but I definitely would have taken advantage of this if I’d known. I agree that tofu is hit or miss in a lot of places. I don’t make it myself for that very reason. I mistakenly ordered it at Moe’s this past weekend and it was disgusting.
Finally, I’m ALL for anything type of salad with avocado in the name and that black bean soup looks awesome.

Your eats look so delicious!! The tofu salad looks absolutely amazing, I imagine it must tasted as good as it looked! I actually love cooking with tofu and find it to be very forgiving, but I enjoy the taste of plain tofu, so I might just be an exception. The cup of soup is so original and tasty looking, seems like you had such a great day of food here!!
A giant lunch salad is my jam! I had one this weekend that hit.the.spot. We went out for a four course meal on Valentine’s Day (go big or go home, right?) and everything was to die for!
I’ll have to check out Kuba Kuba next time I’m in Richmond…it looks delicious!
That buff bowl looks perfect! I am a tofu fan, especially when done right. I’ve found that almost dehyrdating it in the oven gives it a really good chewy texture.
