Grapefruit Yogurt Parfait

Winter can be a little depressing when it comes to fresh produce but luckily, citrus fruit is the silver lining! I love grapefruit and this parfait is a fun way to switch up your yogurt routine when berry season is over.
These grapefruit parfaits use protein-packed Greek yogurt, tart grapefruit, and crunchy almonds to create a quick and easy breakfast that is healthy and delicious! Of course, you don’t have to limit this to breakfast. I had mine for dinner!
How to Pick a Grapefruit
A ripe grapefruit should feel firm all the way around, with no soft spots or dents. It should be slightly oval with a slightly flat top and bottom. The white pith around the fruit segments is the most bitter part of the fruit, so to cut down on the bitterness, remove the pith.
How to Segment a Grapefruit
Using a sharp paring knife, cut off the top and bottom of the grapefruit. This allows you to set the grapefruit flat on a cutting board. Cut the peel and pith off, as close to the flesh as possible. Carefully hold the grapefruit in your hand and cut the segments of grapefruit away from the membrane. It’s ok if the pieces don’t stay intact, as you’ll be slicing the segments into smaller pieces anyway. It doesn’t have to be perfect. The goal is to remove as much of the white pith and membrane as possible.

Ingredients
- 2/3 cup plain or vanilla Greek yogurt
- 1 small grapefruit, segmented and chopped (see note)
- 1 teaspoon honey, or to taste
- 2 tablespoon sliced almonds
Instructions
- In a large glass, spoon half the Greek yogurt into the bottom of the glass.
- Top with a few pieces of grapefruit.
- Add more yogurt and top with more grapefruit.
- Drizzle with honey and add almonds on top.
Notes
To segment the grapefruit, use a paring knife to remove the peel and the white pith that separates the grapefruit pieces. The goal is to cut all the skin away but leave as much of the fruit as possible!
