Quinoa Stuffed Sweet Potatoes

If you’re a sweet potato addict like me, you’re going to love this recipe! Sweet potatoes are perfect for stuffing with healthy ingredients like quinoa, kale, and crispy chickpeas. This recipe has a few little shortcuts that help this meal come together in a flash!
Stuffed Sweet Potato Shortcuts
- I cook my sweet potatoes in the microwave, so they’re ready in 10 minutes.
- I use Path of Life’s Quinoa & Kale, which is ready in just 4 minutes.
- I toast my chickpeas on the stovetop, so they get crispy in about 8 minutes.
How to Cook Whole Sweet Potatoes
For this recipe, I prefer to cook the sweet potatoes in the microwave. You could also roast them in the oven, but they’ll take much longer to cook. To prepare sweet potatoes in the microwave, pierce the skin with a fork 3-4 times on each side. Then place the potatoes on a microwave-safe plate and cover with a damp paper towel. Cook for 6 minutes, then rotate the potatoes and continue to cook for 3-4 minutes or until the potatoes have softened.

Make-Ahead Tips
If you love meal prepping you can easily make the sweet potatoes in advance. Simply reheat in the microwave before serving! If you have leftover quinoa from the Path of Life Quinoa & Kale blend, you can store it in the refrigerator and reheat in the microwave. I don’t recommend trying to prepare the chickpeas in advance, as they won’t stay crispy.

Ingredients
- 4 medium sweet potatoes
- 1 15oz can chickpeas, rinsed and drained
- 1 tablespoon olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- 1 10oz bag Path of Life The Original Quinoa & KaleÂ
- 1 tablespoon tahini
- 1 tablespoon lemon juice
Instructions
- Poke the sweet potatoes with a fork to pierce the skin on all sides.
- Place the potatoes on a microwave-safe plate and cover with a damp paper towel.
- Microwave for 6 minutes, then flip the potatoes over and continue to cook for 6 minutes or until the potatoes are softened.
- In a large non-stick skillet, heat the olive oil over medium heat.
- Add the chickpeas and sprinkle with garlic powder, onion powder, and salt.
- Continue to cook over medium heat, stirring frequently until browned.
- Whisk the tahini and lemon juice together.
- Heat Path of Life’s Quinoa & Kale in the microwave, following the package directions.
- Once the sweet potatoes are softened, slice down the middle of the potato lengthwise.
- Gently mash the inside of the potato then top with the quinoa and kale blend.
- Top with crispy chickpeas and drizzle with the tahini sauce.
- Serve immediately!
