Greek Pita Pizza
These Greek pita pizzas are the perfect quick & easy dinner or shareable snack! They’re a great way to use up the veggies in your fridge and they come together in a snap!
If you’re looking for an easy recipe that will also help you clean out the extra veggies in your fridge, these little pita pizzas are the perfect solution! For this recipe, I leaned into Greek flavors with feta and olives, but you could totally change up the flavors based on what you’re craving!
I topped them with roasted red pepper hummus, but any hummus works great. I used a combination of bell pepper, cucumber, red onion, and tomato, but again feel free to use what you have available. If you’re missing a veggie or two, don’t worry about it! There are so many flavors in these pita pizzas that it’s easy to swap in what you have. Ingredients & Substitutions
- Pita bread– I used 8″ whole wheat pita but you can use any kind you like. You can also make your own homemade flatbread in an air fryer in just a few minutes! Or try using vegan naan as the base.
- Olive oil- I used a little olive oil to help make the pitas crispy. You can use a spray olive oil for a lighter option.
- Hummus– You can use any kind of hummus you like. I used roasted red pepper hummus but this recipe is also great with this za’atar spiced hummus. Or for a high protein option, try my edamame hummus.
- Vegetables– I used a combination of cucumber, red bell pepper, and red onion. Feel free to use whichever vegetables you have on hand.
- Feta– I prefer to use a block of feta cheese, which has a better texture than pre-crumbled feta cheese.
- Olives– I used sliced black olives but any kind of olives can be substituted.
How to Make Pita Pizzas
The Best Pita Bread
Store bought pita bread can be a little bit lackluster, and it’s best if you can find freshly baked pita. Brushing it with olive oil and baking it for just a few minutes can also bring out the best flavor, even in a standard store bought pita. If you can’t get your hands on fresh, fluffy pita bread, try using store bought naan. It tends to be a bit softer and has a little bit more flavor. Since you don’t need a pocket for these pizzas, traditional pita isn’t totally necessary.
The Best Hummus
My favorite store bought hummus is the Ithica brand hummus. I love the lemon dill, lemon beet, and garlic hummus. All of their flavors are great! You can also find CAVA hummus at some Whole Foods stores, which is a really great option. Of course, I think homemade hummus is the best, so if you have time, make it from scratch!

Ingredients
- 3 (8-inch) pitas
- 1 tablespoon olive oil
- 1/3 cup hummus
- 1/3 cup chopped cherry tomatoes
- 1 tablespoon diced red onion
- 1/4 cup chopped cucumber
- 1/4 cup chopped bell pepper
- 1/4 cup crumbled feta cheese
- 1 tablespoon sliced black olives
- Fresh parsley for garnish
Instructions
- Preheat oven to 350 degrees.
- Brush the pita bread with olive oil.
- Bake for 3-5 minutes or until lightly crispy.
- Remove the pita from the oven and allow to cool slightly.
- Spread with hummus, then top with vegetables.
These pita pizzas came out much better than I anticipated. I loved how easy they were to make. I used store-bought hummus, and the next time I make these will get a different flavor.
