These Greek pita pizzas are the perfect quick & easy dinner or shareable snack! They’re a great way to use up the veggies in your fridge and they come together in a snap!

- 3 (8-inch) pitas
- 1 tablespoon olive oil
- 1/3 cup hummus
- 1/3 cup chopped cherry tomatoes
- 1 tablespoon diced red onion
- 1/4 cup chopped cucumber
- 1/4 cup chopped bell pepper
- 1/4 cup crumbled feta cheese
- 1 tablespoon sliced black olives
- Fresh parsley for garnish
Instructions
- Preheat oven to 350 degrees.
- Brush the pita bread with olive oil.
- Bake for 3-5 minutes or until lightly crispy.
- Remove the pita from the oven and allow to cool slightly.
- Spread with hummus, then top with vegetables.
