Description

These Greek pita pizzas are the perfect quick & easy dinner or shareable snack! They’re a great way to use up the veggies in your fridge and they come together in a snap! 


Ingredients

  • 3 (8-inch) pitas
  • 1 tablespoon olive oil
  • 1/3 cup hummus
  • 1/3 cup chopped cherry tomatoes
  • 1 tablespoon diced red onion
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped bell pepper
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon sliced black olives
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Brush the pita bread with olive oil.
  3. Bake for 3-5 minutes or until lightly crispy.
  4. Remove the pita from the oven and allow to cool slightly.
  5. Spread with hummus, then top with vegetables.
