These Mediterranean quesadillas are a healthier twist on a classic recipe. Filled with salty feta, creamy mozzarella, and plenty of veggies, these quesadillas are a tasty meatless meal!
I’ve been on a bit of a quesadilla kick lately and I’ve been having fun creating new variations. These Mediterranean quesadillas are so easy to make and this recipe is a great way to add some extra veggies into your meal. If you enjoy this recipe, be sure to try my feta grilled cheese recipe!
Ingredients & Substitutions
Feta cheese– Feta adds a salty, tangy kick to these quesadillas. I recommend using full-fat feta cheese, which has a creamy texture.
Mozzarella– Shredded mozzarella melts beautifully for that perfect cheese pull.
Tomatoes– Chopped tomatoes add a fresh flavor. You could substitute for chopped sun dried tomatoes for a different flavor.
Red onion– Red onion adds a slight sharpness. You could substitute with shallots for a milder flavor.
Red bell pepper– This adds a slightly sweet flavor. Feel free to substitute for any color bell pepper.
Spinach– Baby spinach is an easy way to add some greens to this meal. You could use kale instead of spinach, just be sure to remove the stems.
Tortillas– I used large 10″ flour tortillas but you can use any kind you like. For additional fiber and protein, I recommend using whole wheat tortillas.
