I’ve been on a bit of a quesadilla kick lately and I’ve been having fun creating new variations. These Mediterranean quesadillas are so easy to make and this recipe is a great way to add some extra veggies into your meal. If you enjoy this recipe, be sure to try my feta grilled cheese recipe!

Ingredients & Substitutions

  • Feta cheese– Feta adds a salty, tangy kick to these quesadillas. I recommend using full-fat feta cheese, which has a creamy texture.
  • Mozzarella– Shredded mozzarella melts beautifully for that perfect cheese pull.
  • Tomatoes– Chopped tomatoes add a fresh flavor. You could substitute for chopped sun dried tomatoes for a different flavor.
  • Red onion– Red onion adds a slight sharpness. You could substitute with shallots for a milder flavor.
  • Red bell pepper– This adds a slightly sweet flavor. Feel free to substitute for any color bell pepper.
  • Spinach– Baby spinach is an easy way to add some greens to this meal. You could use kale instead of spinach, just be sure to remove the stems.
  • Tortillas– I used large 10″ flour tortillas but you can use any kind you like. For additional fiber and protein, I recommend using whole wheat tortillas.
