Ingredients & Substitutions
- Feta cheese– Feta adds a salty, tangy kick to these quesadillas. I recommend using full-fat feta cheese, which has a creamy texture.
- Mozzarella– Shredded mozzarella melts beautifully for that perfect cheese pull.
- Tomatoes– Chopped tomatoes add a fresh flavor. You could substitute for chopped sun dried tomatoes for a different flavor.
- Red onion– Red onion adds a slight sharpness. You could substitute with shallots for a milder flavor.
- Red bell pepper– This adds a slightly sweet flavor. Feel free to substitute for any color bell pepper.
- Spinach– Baby spinach is an easy way to add some greens to this meal. You could use kale instead of spinach, just be sure to remove the stems.
- Tortillas– I used large 10″ flour tortillas but you can use any kind you like. For additional fiber and protein, I recommend using whole wheat tortillas.
How to Make Mediterranean Quesadillas
How to Store and Reheat Quesadillas
Store leftover quesadillas in an airtight container in the refrigerator. They will last for 2-3 days. To maintain the crispy exterior, reheat them in a skillet over medium heat or in the oven at 350 degrees for about 3-4 minutes.
What to Serve with Mediterranean Quesadillas
- Quesadilla sauce– This spicy sauce is a great dip for your quesadilla!
- Tzatziki sauce– Lean into the Mediterranean flavors with tzatziki sauce.
- Tomato Cucumber Salad– This chopped salad makes a great side dish to pair with this quesadilla.
