I’ve been on a bit of a sandwich kick lately, and we’ve been making a lot of grilled cheeses. I wanted to switch it up and give it a little Greek-inspired twist, and I love how it turned out! This feta grilled cheese is the perfect balance of savory and salty.

Ingredients

  • Bread– I recommend a hearty sourdough bread, but you can use any type of bread you like. Gluten-free bread works, too!
  • Feta– Be sure to buy high-quality feta. I prefer the texture of a block of feta rather than pre-crumbled feta.
  • Mozzarella– Fresh mozzarella or shredded mozzarella both work well in this sandwich.
  • Roasted red peppers– I bought a jar of roasted red peppers but if you’re feeling ambitious, you can roast your own red peppers! If you don’t like red peppers, you could use tomato instead.
  • Spinach– This is optional, but it’s a great way to add some greens to the sandwich. Feel free to substitute with arugula.

Tips for Making the Best Grilled Cheese

  • Choose the right bread. Use bread that is fresh, hearty, and sturdy enough to hold the sandwich together. I recommend a hearty sourdough.
  • Use room-temperature butter. Cold butter is hard to spread and can end up tearing the bread. Room-temperature butter is much easier to spread. If your butter is cold, cut it into pieces and let it sit for a minute or two before spreading.
  • Cook over low heat. Keep the heat low when toasting the sandwich to prevent the bread from burning before the cheese has melted. This will allow the cheese to melt evenly without burning the bread.
  • Cover the pan. Covering the pan with a lid while grilling the sandwich can help the cheese melt faster and more evenly.
