Every time we order Chinese food, I cross my fingers that my veggie stir fry will be loaded with broccoli. In my opinion, it’s the best of the fried rice vegetables. Maybe it’s because broccoli soaks up more of the sauce or maybe it’s because I love the texture, but whatever the reason, broccoli is my favorite. So today, I’m teaming up with Minute Rice to bring you an easy dinner recipe that only takes a few minutes to put together!

How to Make Broccoli Fried Rice

This recipe comes together really quickly if you use Minute® Ready to Serve Rice. All you have to do is microwave it for a minute and you’re ready to go! Add in a few other simple ingredients and you’ve got yourself dinner! It’s kind of perfect, especially if you’re not so great with portion control like me. If you don’t have Minute Ready to Serve Rice, you can use regular brown rice. It’s best if you can let the rice cool before starting the stir fry. You’ll end up with a better texture! Once your rice is ready, you simply stir fry the rice, add the egg, and then add the vegetables!

You can also use regular brown rice. Just cook it on the stovetop or in a rice cooker, and then let it cool. You can even prepare the rice in advance the day before.

The Best Vegetables for Fried Rice

While broccoli is the star of this fried rice recipe, you can still add other vegetables to this dish! Here are a few vegetables I’d recommend adding to your fried rice:

  • Shredded carrots– I typically buy bagged shredded carrots to save time.
  • Peas– Canned or frozen peas are a great addition.
  • Corn– Canned or frozen corn adds a lovely sweetness.
  • Chopped bell peppers– I love the color bell peppers can add to a recipe.
  • Edamame– Technically, it’s a legume and not a vegetable but edamame is a great way to add more protein to the dish!

Description

This easy broccoli fried rice is made with hearty brown rice and plenty of vegetables for a tasty meatless meal! This recipe comes together in just 15 minutes thanks to quick-cooking rice!


Ingredients

  • 1 tablespoon grapeseed oil
  • 3 cups cooked brown rice (cold or room temperature)
  • 1 egg
  • 1 cup broccoli florets, chopped into 1″ pieces
  • 1/2 cup corn (fresh or frozen)
  • 1/2 cup peas (fresh or frozen)
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon tamari or soy sauce

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the rice and stir to distribute the oil.
  3. Push the rice to one side and add the egg.
  4. Scramble the egg into the rice over high heat.
  5. Add in the broccoli, corn, and peas and cook over high heat for 2-3 minutes or until the veggies are brightly colored and just begin to soften. (If you’re using frozen veggies, it’ll take a bit longer.)
  6. Add the tamari, garlic, and ginger and cook for another minute.
