These chocolate-covered apricots are a simple, delicious treat! With just 3 ingredients, these are an easy dessert to add to a charcuterie board or dessert tray!

- 1/4 cup chocolate chips
- 1/2 cup dried apricots
- 2 tablespoons chopped salted, roasted pistachios
Instructions
- Add the chocolate chips to a microwave-safe bowl. Microwave at 50% power for 2-3 minutes, stirring frequently until melted. Be sure to cook slowly at a low temperature so the chocolate doesn’t burn.
- Dip each dried apricot into the chocolate, about halfway up the apricot.
- Dip the chocolate-covered part of the apricot into the chopped pistachios.
- Place the apricots on a parchment paper lined tray.
- Refrigerate until chocolate is set.
