These fajita-style veggies are the copycat version of your favorite fast casual spot. They’re perfectly seasoned, just the right amount of char, and they make a great topping for burritos or rice bowls. Now you can make these tasty fajitas at home with just a handful of ingredients and one skillet.
Ingredients & Substitutions
- Green bell peppers – Green bell peppers give that signature flavor and a bit of bite. You can use red, yellow, or orange for a sweeter flavor.
- Red onion – Red onions bring a little sweetness and a lot of color. Slice them thin so they cook quickly and evenly.
- Olive oil – You just need a couple of tablespoons to sauté everything to perfection. Avocado also oil works if that’s your go-to.
- Oregano – This is the secret weapon. It adds an earthy, citrusy flavor that makes these taste like they came straight off the line at your favorite bowl-and-burrito spot.
- Salt – Just enough to bring it all together. Start small and season to taste.

How to Store Leftovers
Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat in a skillet for best results (but the microwave will do in a pinch). I do not recommend freezing leftovers.

- 1 red onion, thinly sliced
- 2 green bell peppers, thinly sliced
- 1 teaspoon dried oregano
- Salt, to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add red onion and cook, stirring frequently, for about 2 minutes, until beginning to soften.
- Add the sliced bell peppers, oregano, and salt. Cook for 5 to 7 minutes, stirring occasionally, until peppers are softened and the onions are translucent.
- Remove from heat and serve warm. Enjoy them with your favorite main dish or stuff them right into tacos!
