What I Ate Monday
Is anyone else counting down the hours to Thanksgiving dinner? I may not participate in the turkey-eating but I will definitely be eating all the other dishes and let’s be honest, the side dishes are the best part. Pass me the potatoes! I’m planning on making this wild rice & butternut squash dish! Pictures to come, of course.
But first, I’m sharing all my eats from Monday in honor of the What I Ate Wednesday party! Ready?
I made some grain-free granola on Sunday and used it to top my yogurt + strawberries. It was SO GOOD. Stay tuned for the recipe. I can’t wait to share it!
I had a pretty early breakfast so my stomach was growling around 11am. Even though lunch was around the corner, I tore into one of these 100 calorie packs of almonds.
These packs make you realize how tiny a serving of almonds really is! 😉 But luckily this kept me from being ravenous at lunch. (If I’m too hungry, then I usually go crazy at the salad bar and end up getting way too much food!)
I grabbed a quick lunch with a friend while eating this salad. It was tons of veggies + beans with a heap of pico de gallo. And fried jalapenos because… they’re delicious.
I had some snacks packed for the afternoon but that salad kept me surprisingly full. I did a little shopping on my way home so by the time I walked in the door, I was thankful that dinner was ready in the crockpot.
I wasn’t in love with this lentil soup so I won’t share the recipe, but it did fill us up. I don’t cook lentils as often as I should. They’re so delicious and they’re packed with protein and fiber. (Plus, they’re cheap!)
After dinner, I played piano and enjoyed some peppermint tea. It’s the perfect winter activity. Later on, Alex and I watched a couple of episodes of 30 Rock. Naturally, I had to have a little something sweet.
We had a little ice cream in the freezer leftover from this cookie dough ice cream pie, so I had a little cup. It was the perfect treat to end the day!

My favorite late night sweet treat is definitely something with peanut butter and chocolate… I also like ice cream too!
Peanut butter and chocolate ice cream is probably my ultimate favorite 😉
Ice cream would have to be it… but I can’t keep it in the house. It can only be a special treat because I’m not good with portion control when it comes to ice cream!
Fave nighttime treat is also some ice cream! Strawberry, caramel, or gf cookie dough. Or pumpkin spice in season.
Do you have a favorite brand of gf cookie dough? I have a gf friend and I’d love to find some that she could enjoy too!!
I’ve never tried fried jalapenos before, but being a spicy food lover, I think this needs to be on my food wish list!
They’re definitely one of my favorite salad toppings!
Ooooo I made a bsquash/wild rice dish the other week for the first time and it was glorious. I love your addition of pistachios! Also can’t wait for that grain free granola. Enjoy your holiday celebrations! (and especially those potatoes :). Oh and I can’t go to bed without some form of chocolate. I just can’t.
Cookie dough ice cream is one of my favourites! Usually ice cream or ice cream bars are my go to sweet treat 🙂
I’m so bad about eating the snacks I pack even when I’m not really hungry. Oh well.
I am in the same page as you when it comes to lentils. I love them but don’t have them enough!!
Haha I have to keep my snacks in my bag because if they’re on my desk, I’ll eat them right away haha
I think I started the countdown last year, after the feasting, of course. I’m meatless but I don’t mess around when it comes to sides and pies!

I try to keep frozen fruit (blueberries/raspberry/blackberry mix) on hand for late night treats. That usually does it! If not, a good 85% dark chocolate bar + hot tea.
