Carrots are one of my favorite vegetables to roast because they get so sweet and flavorful in the oven. This recipe takes things up a notch by adding za’atar, a fragrant Middle Eastern spice blend that combines sesame seeds, sumac, and herbs. This is one of those simple side dishes that feels a little more special than your average roasted carrots, but it only takes a few minutes to prep! - Carrots – I used standard orange carrots, peeled and sliced evenly so they roast at the same speed. You could also use rainbow carrots for extra color.

Ingredients
- 2 lbs carrots, peeled, cut crosswise and lengthwise into evenly sized pieces
- 2 tablespoons butter, melted
- 1 teaspoon za’atar seasoning
- Salt to taste
- Cilantro for garnish
Instructions
- Adjust oven rack to middle position and preheat oven to 425 degrees.
- In a large bowl, combine carrots with butter, za’atar seasoning, and a pinch of salt. Toss to coat.
- Transfer the carrots to a parchment-lined rimmed baking sheet and spread in single layer.
- Cover the baking sheet tightly with foil and cook for 15 minutes.
- Remove foil and continue to cook, stirring twice, until carrots are well browned and tender, 30 to 35 minutes. Season with additional salt to taste, if needed.
