Getting In The Greens

I haven’t been hitting the grocery store as often as normal, so I ran out of greens on Sunday, and wasn’t able to make it to the grocery store until last night. The lack of fresh produce and veggies meant that I was eating a lot of smoothies and yogurt, which I love, but they don’t really pack in a lot of greens the way I normally do.

I think my body was craving greens, because I loaded up on them yesterday.


Ok, this makes me sound a little high maintenance… but every morning starts off with 3 essential drinks.

  1. Water (+ lemon and apple cider vinegar)
  2. Protein shakeย (+ frozen spinach)
  3. Coffee (+ almond milk and stevia)

I look ridiculous with so many cups on the table. But don’t judge. It’s my thing.


I was getting good at packing my lunches, but I was craving a salad. So I had the exact same salad as last week.

This was romaine, chickpeas, tomatoes, onions, carrots, feta, olive oil, and balsamic vinegar. So delicious. I could just eat this forever.


I can’t make it through the day without an afternoon snack. Sure, I could probably just eat a bigger lunch, but I kind of love having an afternoon snack. So I usually have something to much on at my desk. I’m addicted to these soy crisps. No greens here, but these actually pack in a decent amount of protein, which helps keep me full until dinner.


I ate a light dinner, because I was meeting some girls for drinks at Secco, and didn’t want to be stuffed.

My co-worker (Hi, Angela!) gave me some okra, which I’d never cooked with, but I figured would probably be good roasted.

I sliced it up with a mandolin slicer, sprayed it with a bit of olive oil, sprinkled on some salt and pepper, and roasted it in the oven at 400 for about 15 minutes. I’ll be honest, it wasn’t my favorite. I think okra is probably best fried. Oh well.

I had this with some vegan mac n’ cheese, and it was perfect! I hadn’t had that in forever! Couscous + soymilk + nutritional yeast. Add a little salt and pepper, plus a little paprika, and it’s quite good.

  1. What does the Apple Cider Vinegar do in your water? I have never seen that.

    • I’ve read that ACV can help with digestion, clearing your skin, and even lowering your cholesterol! I’ll have to do a post on it because there’s so much! I only put in about 2 tsp though. It’s potent stuff!

  3. I know the feeling- I sort of freak out if I don’t have a bag of lettuce available at all times. Even with a stocked pantry, I’m like THERE”S NOTHING TO EAAAATTTTT. A little overdramatic, but that’s just how I roll.

  5. I’ve been loving spinach and brocolli lately, which are both packed in my salad for lunch today. I honestly don’t know how people get through the day without snacks, especially afternoon snacks. Some days my snacks are what I’m most excited about ๐Ÿ™‚

  6. I have at least 4 beverages every morning: preworkout BCAAs, postworkout protein shake, water, and coffee.

    Also, my husband says that if I ate any more greens I would probably turn green! Kale + spinach are the best – so is the super greens mix fromTrader Joes (kale,spinach,chard)!

  9. Oh my I am loving all of your food. Don’t feel too high maintenance about the morning. I love having water (with lemon no vinegar), hot tea, and a smoothie. Just a good idea to get all of those liquids in.
    I would totally crave your lunch salad all the time. I love chickpeas ๐Ÿ™‚

  13. All your food looks so amazing! I had okra once when I was little and it was slimy, this could have been because it was frozen and cooked wrong, but I’ve been scared to eat it again ever since.

  15. I’m impressed with how much you drink in the morning! I’m always proud of myself if I manage to get one glass of anything down, haha! I’m just never thirsty in the morning. I should be better about it, though!

  17. Ohh, I loooove baked okra, but I guess it may not be everyone’s style. Definitely my favorite veg right now, but that’ll change with the season, probably. And I’m in love with soy crisps–I’ve never tried the WF brand, as I get the genisoy ones at my local grocery, but they have the best flavors–both the BBQ and the salt and vinegar are just so goooood.

  18. Oh my goodness, this post just reminded me that I bought okra last week & haven’t cooked it yet. Lunch today! I’ve never tried it – any tips/suggestions?

    • Haha I think my suggestion is… don’t do what I did ๐Ÿ˜‰ I didn’t love it roasted. I’ve had a lot of people tell me that stir frying it is pretty good (obviously frying it is probably the tastiest but… I was trying to avoid that!)

  19. You’re so healthy! Today I had some blueberries with my breakfast and sweetcorn/tomato/beans with my lunch. I think I’m going to have thai green curry for dinner…. oh and my afternoon snack was a cupcake cookie from millie’s – I couldn’t turn it down!

  20. I crave greens whenver I don’t get in my daily spinach salad beast! I feel ya, girl! I too don’t like to feel stuffed when I go out for a drink. I always like to make drinks a between-meals or pre-dinner thing, not after a meal thing! I never really want a drink after a meal.

  22. I love roasted okra. I put it in a 375 oven for about 30 minutes. You want to roast long enough to get the slimminess (is that a word) out of it. Also leave the pods whole, it’s like eating fries!! I will have to try the mac and cheese soon!

  23. I actually have never eaten okra, but seeing it all over food blogs recently is making me want to try it! I am planning on eating a Huge Jass Salad for lunch to get some greens in ๐Ÿ™‚

    I actually have never eaten okra, interesting. My hands down favorite green is Arugula! I cannot get enough of it! Love the flavor. And by the way, you take such awesome pictures of food, too!

  25. You seriously had me at okra. Being a southern girl, I love me some good okra. Usually I prefer mine fried (lol not so healthy, but totally sticking to the southern thing), but I like it grilled or roasted too. I’m definitely gonna have to get on that Vegan mac n cheese, mainly for my roommmate (she is vegan), but also for myself because it just looks that good.

    That’s how I get my extra dose of greens aside from the salad, brussels, and broccoli I savor almost every day.

    I love ACV in the morning and night. I usually just take a swig from the bottle b/c I’m lazy. I have tried it with lemon juice, water, and a touch of baking soda for a nice fizz. It’s pretty good with the soda, just don’t use baking soda everyday.

  29. I went through a phase of loving grilled okra..I’m over it now haha! So far my greens for today have been in the form of grilled zucchini with lunch…I foresee broccoli & green beans in my near future! Also your assortment of drinks make me smile because I’m just the same: iced coffee, green tea, and a bottle of h20!

  31. As of late I’ve been obsessed w/ eating bok choy, like in everything! I love grilling it in the summer, so good!

  35. I like okra any which way, but I’m actually not sure I’ve ever roasted it. Guess what I wil be trying soon?

    Now that I’ve finally gotten over my fear of making protein shakes, I will finally invest in the frozen spinach, cost-saving trick.
