Getting In The Greens
I haven’t been hitting the grocery store as often as normal, so I ran out of greens on Sunday, and wasn’t able to make it to the grocery store until last night. The lack of fresh produce and veggies meant that I was eating a lot of smoothies and yogurt, which I love, but they don’t really pack in a lot of greens the way I normally do.
I think my body was craving greens, because I loaded up on them yesterday.
Breakfast
Ok, this makes me sound a little high maintenance… but every morning starts off with 3 essential drinks.
- Water (+ lemon and apple cider vinegar)
- Protein shake (+ frozen spinach)
- Coffee (+ almond milk and stevia)
I look ridiculous with so many cups on the table. But don’t judge. It’s my thing.
Lunch
I was getting good at packing my lunches, but I was craving a salad. So I had the exact same salad as last week.
This was romaine, chickpeas, tomatoes, onions, carrots, feta, olive oil, and balsamic vinegar. So delicious. I could just eat this forever.
Snacky-Snack
I can’t make it through the day without an afternoon snack. Sure, I could probably just eat a bigger lunch, but I kind of love having an afternoon snack. So I usually have something to much on at my desk. I’m addicted to these soy crisps. No greens here, but these actually pack in a decent amount of protein, which helps keep me full until dinner.
Dinner
I ate a light dinner, because I was meeting some girls for drinks at Secco, and didn’t want to be stuffed.
My co-worker (Hi, Angela!) gave me some okra, which I’d never cooked with, but I figured would probably be good roasted.
I sliced it up with a mandolin slicer, sprayed it with a bit of olive oil, sprinkled on some salt and pepper, and roasted it in the oven at 400 for about 15 minutes. I’ll be honest, it wasn’t my favorite. I think okra is probably best fried. Oh well.
I had this with some vegan mac n’ cheese, and it was perfect! I hadn’t had that in forever! Couscous + soymilk + nutritional yeast. Add a little salt and pepper, plus a little paprika, and it’s quite good.
I’m the same way with my morning beverages! Except I have tea instead of coffee. : )
I went through a phase of loving grilled okra..I’m over it now haha! So far my greens for today have been in the form of grilled zucchini with lunch…I foresee broccoli & green beans in my near future! Also your assortment of drinks make me smile because I’m just the same: iced coffee, green tea, and a bottle of h20!
Spinach + Frozen Banana + Vanilla Protein Powder = Awesome Smoothie!
That’s how I get my extra dose of greens aside from the salad, brussels, and broccoli I savor almost every day.
I love ACV in the morning and night. I usually just take a swig from the bottle b/c I’m lazy. I have tried it with lemon juice, water, and a touch of baking soda for a nice fizz. It’s pretty good with the soda, just don’t use baking soda everyday.
I love soy crisps, especialy Genisoy kind :)!
Genisoy are my favorite too!!! Although for the BBQ flavor, I actually prefer the Whole Foods brand!
Mmm, I love roasted okra! I am planning on having a nice big salad full of greens for dinner tonight. 🙂
You seriously had me at okra. Being a southern girl, I love me some good okra. Usually I prefer mine fried (lol not so healthy, but totally sticking to the southern thing), but I like it grilled or roasted too. I’m definitely gonna have to get on that Vegan mac n cheese, mainly for my roommmate (she is vegan), but also for myself because it just looks that good.
Haha yeah I’m going to have to keep trying some okra recipes! I wasn’t a big fan of roasting!
Meals lookin’ awesome, lady! I am so the “cup girl”, too, at work. My smoothie, my coffee, and then a water. ha! who judges? back up off me!
I actually have never eaten okra, interesting. My hands down favorite green is Arugula! I cannot get enough of it! Love the flavor. And by the way, you take such awesome pictures of food, too!
Haha my co-worker who gave me the okra is obsessed with arugula!!! Our cafeteria only has it sometimes, and we both cheer when they do 😉
I actually have never eaten okra, but seeing it all over food blogs recently is making me want to try it! I am planning on eating a Huge Jass Salad for lunch to get some greens in 🙂
I love roasted okra. I put it in a 375 oven for about 30 minutes. You want to roast long enough to get the slimminess (is that a word) out of it. Also leave the pods whole, it’s like eating fries!! I will have to try the mac and cheese soon!
Maybe I needed to roast it longer! Or cut it length wise maybe? Mine wasn’t that great! :/
Vegan mac and cheese sounds delicious! And I must agree with Kerry, you are probably the healthiest person I know 🙂
