Getting In The Greens
I haven’t been hitting the grocery store as often as normal, so I ran out of greens on Sunday, and wasn’t able to make it to the grocery store until last night. The lack of fresh produce and veggies meant that I was eating a lot of smoothies and yogurt, which I love, but they don’t really pack in a lot of greens the way I normally do.
I think my body was craving greens, because I loaded up on them yesterday.
Breakfast
Ok, this makes me sound a little high maintenance… but every morning starts off with 3 essential drinks.
- Water (+ lemon and apple cider vinegar)
- Protein shake (+ frozen spinach)
- Coffee (+ almond milk and stevia)
I look ridiculous with so many cups on the table. But don’t judge. It’s my thing.
Lunch
I was getting good at packing my lunches, but I was craving a salad. So I had the exact same salad as last week.
This was romaine, chickpeas, tomatoes, onions, carrots, feta, olive oil, and balsamic vinegar. So delicious. I could just eat this forever.
Snacky-Snack
I can’t make it through the day without an afternoon snack. Sure, I could probably just eat a bigger lunch, but I kind of love having an afternoon snack. So I usually have something to much on at my desk. I’m addicted to these soy crisps. No greens here, but these actually pack in a decent amount of protein, which helps keep me full until dinner.
Dinner
I ate a light dinner, because I was meeting some girls for drinks at Secco, and didn’t want to be stuffed.
My co-worker (Hi, Angela!) gave me some okra, which I’d never cooked with, but I figured would probably be good roasted.
I sliced it up with a mandolin slicer, sprayed it with a bit of olive oil, sprinkled on some salt and pepper, and roasted it in the oven at 400 for about 15 minutes. I’ll be honest, it wasn’t my favorite. I think okra is probably best fried. Oh well.
I had this with some vegan mac n’ cheese, and it was perfect! I hadn’t had that in forever! Couscous + soymilk + nutritional yeast. Add a little salt and pepper, plus a little paprika, and it’s quite good.
I crave greens whenver I don’t get in my daily spinach salad beast! I feel ya, girl! I too don’t like to feel stuffed when I go out for a drink. I always like to make drinks a between-meals or pre-dinner thing, not after a meal thing! I never really want a drink after a meal.
You’re so healthy! Today I had some blueberries with my breakfast and sweetcorn/tomato/beans with my lunch. I think I’m going to have thai green curry for dinner…. oh and my afternoon snack was a cupcake cookie from millie’s – I couldn’t turn it down!
Haha the chocolate pumpkin fudge that I consumed AFTER I wrote this post, isn’t pictured! but let me tell you… it was good 😉

Oh my goodness, this post just reminded me that I bought okra last week & haven’t cooked it yet. Lunch today! I’ve never tried it – any tips/suggestions?
Haha I think my suggestion is… don’t do what I did 😉 I didn’t love it roasted. I’ve had a lot of people tell me that stir frying it is pretty good (obviously frying it is probably the tastiest but… I was trying to avoid that!)
Ohh, I loooove baked okra, but I guess it may not be everyone’s style. Definitely my favorite veg right now, but that’ll change with the season, probably. And I’m in love with soy crisps–I’ve never tried the WF brand, as I get the genisoy ones at my local grocery, but they have the best flavors–both the BBQ and the salt and vinegar are just so goooood.
Personally I like WF brand better for the BBQ flavor, although for regular sea salt, I prefer Genisoy. Regardless, I buy whatever is on sale 😉
Haha, that’s my style of shopping! I’m definitely going to pick up a bag of the WF ones to try this weekend, especially if their BBQ is even better than genisoy’s.
i don’t think i have ever tried okra..i’m sure roasting it would be delicious though!
I’m impressed with how much you drink in the morning! I’m always proud of myself if I manage to get one glass of anything down, haha! I’m just never thirsty in the morning. I should be better about it, though!

All your food looks so amazing! I had okra once when I was little and it was slimy, this could have been because it was frozen and cooked wrong, but I’ve been scared to eat it again ever since.

I just do about 2 tsp in 16oz of water. It has so many benefits, I think I’ll have to do a whole post on it! But I’ve heard its good for your digestive system 🙂
Hey, that water, lemon, apple cider drink looks intriguing… Is it a cleanse? I may have to try this 🙂
