Scones & Races!

I liked reading your comments about getting personal! Sounds like most of you like reading more personal things, but are careful about what you post, which makes sense. It’s not like I have some crazy amazing stories to tell you. But I could. You never know.

So who watched the royal wedding this morning? Despite going out last night (that was some good wine) I woke up at 5:30am to eat scones and watch the wedding with my roomies. (I’m pretty sure I dozed off for part of the ceremony) but it was cool! Honestly, I’m not sure what all the fuss was about. But I’m a sucker for trending topics…

The lemon poppyseed scones my roommate made were delicious!


That’s not my picture, because it was 5:30 in the morning and I didn’t feel like lugging my camera out. Sorry. But they did look like the ones in the picture.

Have you ever made scones? I haven’t, and I’d actually never even eaten one before, but I must say, they were quite good! If you have a scone recipe for me, I think I’d like to try making some different flavors!

In other news (was me eating a scone news? Apparently.) I signed up for the Race for the Cure next week!

I’m pretty excited. It’s just a 5k, but it should be fun! Hopefully the weather is good šŸ™‚ I haven’t been running much lately, partly because I’ve been sick, and partly because I just haven’t felt like running. I’ve still be working out, just less cardio these days. Today I’ve got an appointment with a personal trainer, and it’s been awhile since I’ve done that… so I’m looking forward to getting my booty kicked! Do you like to workout on your own, or do you like classes/trainers? I don’t like working out by myself. I either need a buddy, a class, or a trainer! They keep me motivated!

That’s all I’ve got. Time for some more coffee…

Restaurant Week! (WIAW)

Here in Richmond, it’s “Restaurant Week” which means you can try out a new restaurant, for $25.11, and some of the proceeds are donated to the food bank! This is a deal you can’t pass up šŸ™‚

We decided to take a trip to Rowland Fine Dining. The restaurant was lovely, but the lighting wasn’t so great, so I apologize for the pictures!

The pictures certainly don’t do it justice.

I started with a hummus platter. It came with toasted bread topped withĀ caramelizedĀ onions, roasted red peppers, and olives. (I don’t like olives, but my friend Emily does!)

This was followed by eggplantĀ Parmesan, which I’d never had before, but I LOVED!

The meal was finished off with “Derby Pie” which was some sort of chocolate/pecan?walnut? pie. It was pretty amazing, and I ate almost all of it, despite being super full!

Apparently dessert wasn’t all we were in for! Our server also brought us watermelon vodka shooters! (Pretty tasty!)

Nice touch, waiter man šŸ˜‰ It was a fun meal, and everything tastes better when eaten with friends! I would definitely go back here, but I will say, it’s on the pricy side. (Obviously, being restaurant week, it was cheaper, but keep it in mind if you’re checking it out!)

The rest of life (you know, the small fraction of my life that doesn’t revolve around food blogging) has been super busy, but lots of fun! Now that the weather is warm, I feel like life is bursting with activity!! (Clarifying, it’s been busy with socialĀ activities, so I have no complaints.) I’m currently debating how personal to get in the blogosphere. It’s always a strange thing, because I honestly have no idea who reads this. (I know how many people read it… but not really who…) Sooo while that debate continues on in my head… I’ll stick to the food!

If you’re a blogger, do you get personal on your blog? If you’re just a reader, do you like it when people get personal on their blog?

Does anyone else feel like they get busier when the weather warms up?

Family Fun + My First Omelet

My family is pretty cool. Just so you know. My parents and grandma came to visit for the weekend and it was SO. MUCH. FUN. It actually made me kind of homesick, because I had so much fun. But lets focus on the positives.

After church, we went to brunch and I had this lovely breakfast:

Egg white omelet with spinach, broccoli & chopped tomatoes. Served with a side of fruit. Quite tasty. I’d never had an omelet before. Strange, no? I was starting to feel weird about eggs but I think I’m able to accept it (after finding out that eggs we eat aren’t fertilized by roosters, and therefore never going to be a chicken). Anyways, this breakfast was filling and delicious!

After lunch, we stopped by Very Berry Frozen Yogurt for some much needed dessert!

My dad filled his with fruit and granola. (Funny story: One time he was telling me about seeing granola at a breakfast bar and he described it like this: “It was like they had a bunch of granola bars and they had broken them up, so you could just put them on your yogurt and stuff!!” I was like “dad… that’s granola… how do you think they make the bars?” Apparently he thought granola came from granola bars… not the other way around. Oh dad. I love you.)

It was fun hanging out with my family for the weekend!

My New Favorite Grain

Its no secret I love carbs. Me and grains, we’re pretty good friends. One of my favorites is couscous. I also love quinoa. But today, my favorite grain is rice.

And I’m not talking about wild rice. Or whole grain rice. Or brown rice.

No, today, I’m IN LOVE with packaged, white minute rice.

Sure, it might be devoid of any real nutrients. But…


After a little phone-in-the-toiletĀ fiasco, I stuck it in a bag of rice for 2 days… and the rice sucked the moisture out. And just like magic, my phone has been healed!!

Time for more family fun! I love it when my parents visit. I just got back from a coffee date with mi madre and I drank entirely too much hazelnut coffee. No complaints here. Sitting in a coffee shop with my mom is one of my favorite things!

We’re about to head out for dinner. My family has totally different eating habits, so it’s always an interesting time. šŸ˜‰

Do you eat differently than your family? I’m the only vegetarian in my family, so I always get some good humored eye rolls!

Allllmost empty bottle of kombucha, my blackberry, and my notebook/journal.

2. Name 2 foods you cannot live without

Peanut Butter (Homemade, because I’m tight with my vitamix)

Nutritional Yeast!!! This stuff is so underrated. And SO freaking delicious.

3. Name 1 thing you did today

Made a delicious banana/almond milk/chia seed smoothie, while I read the Wall Street Journal this morning. Such a fantastic way to start the day!

In other news, I dropped my phone in the toilet yesterday. Oops. Sadest part? It’s not the first time I’ve done this… So it’s currently sitting in a bag of rice drying out, while I cross my fingers that it still works. I took the battery out, and the rice is supposed to absorb any of the water that’s still in there. So we shall see. Am I the only one that is super prone to breaking electronic devices? The good news is, I still have my blackberry, so I’m not totally phone-less. But still.

The phone incident combined with some work stress made for kind of a rough afternoon. Thankfully, dinner with a friend (+ a giant bottle of moscato…) really turned the day around šŸ™‚

Tell Me Whatcha Want, Whatcha Really Really Want…

Oh yes I did just make a terrible song reference, don’t even try to pretend like you don’t know what I’m talking about.

Last night I had a fascinating conversation with some friends. Imagine me, and a table full of dudes, talking about “what we want in a soulmate.” You think I’m kidding. I’m not. Quite interesting. (I think my favorite answer of the night was “Pam, from the office”)

Which got me thinking about things I want. But since the three top things I look for in a mate aren’t that interesting (shared values, ambition, and a sense of humor) … here is a list of things I want:

1. A spiralizer

I’m pretty sure I’d have hours of fun with this baby in the kitchen. (Because I’m the type of person that has hours of fun with kitchen appliances.)

2. Unnecessarily adorable dishes

As seen in Vogue. Tell me you don’t want to eat on those. I’m pretty sure food would taste at least 47% better.

3. A Macbook Pro.

I have this in the CART and I’m afraid to pull the trigger and buy it already. Tell me to just freaking do it! I need a new laptop and I’ve been dreaming of this one for too long.

Those are the things I’m loving right now.

[Vegan/Gluten-Free/Raw] Summer Salad

In an effort to make up for such a craaaazy post about boxed cupcakes (ha.) I’ve got a nice vegan, raw, gluten-free recipe to share! It’s all about balance, no?

By the way, ya’ll are awesome. I loved reading your comments, and I’m glad no oneĀ condemnedĀ me for making funfetti cupcakes. šŸ˜‰

So here is a tasty, refreshing summer salad… funfetti not included…

Summer Bean & Corn Salad

  • 4 cups black beans (rinsed and drained)
  • 1 1/2 cups sweet corn
  • 1 red tomato
  • 3 green onions
  • 1 Ā bell pepper (any color)
  • 1 lime
  • 1 avocado
  • Fresh Cilantro
  • CayenneĀ Pepper
Gather your ingredients…
Chop up the veggies and start dumping them into a bowl with the beans and corn.Ā Ā Slice your lime in half… (and while we’re at it, forgive my awful knife skills.)
Then all you gotta do is squeeeeeeze the lime juice on top, and add a bunch of chopped cilantro. (It’s not an exact science. I chopped up a small handful.) Sprinkle with some cayenne pepper, and toss to get it all combined!
Easy, delicious, healthy, and refreshing. Funfetti sprinkles not included…
(Note: I didn’t add the avocado until a little later, so it wouldn’t be brown before serving!) You can serve this with chips, tortillas, or with just a fork! It makes a pretty big bowl, so if you’re serving it as a dip, I’d say it serves 10-12. If you’re using it as a main dish (like me) I’d guess it serves 2-4 hungry people. šŸ™‚
In other news, I’ve got a cold… again… Last time, I totally lost my voice, so I’m hoping that doesn’t happen again! In the mean time, I’m drinking tea like it’s my job.

Food Bloggers Sin

Confession time.

I made cupcakes. From a box. It wasn’t organic. It wasn’t gluten free. It wasn’t vegan. It wasn’t healthy.

I definitely couldn’tĀ pronounceĀ all the ingredients on the list.

And don’t even get me started on the frosting.

Yet, I’m proud to say, that everyone at the party survived. And they liked the cupcakes. *sigh*

And it didn’t really matter, because the afternoon wasn’t about the cupcakes. It was about the friends, the birthday, and the surprise!

We threw a little surprise party for my friend Nirali:

We gathered at Sticky Rice and surprised the birthday girl! It was a success, and no one died from the cupcakes (or the buckets of tater tots that we ordered…)

Let’s Talk Thai

Why does it take me so long to try things?! Seriously. What the heck.

My friend and I had been talking about getting Thai food for… basically forever. And we hadn’t. But on Sunday, we finally got around to doing it! (Let’s clarify, he’s had Thai food before. I’m the slow one.) The weather was so nice, we took a walk and ended up at Ginger Thai in Carytown.

The only Thai food I’d had before was this tomato soup, which was good… but didn’t compare to Ginger Thai!

I had a delicious plate of mixed vegetables covered in the most wonderful sauce. I don’t remember what it was, but it was excellent! I would totally get this again!

My friend had a coconut type of dish:

AND he got Thai iced tea! It was like ice tea and coconut milk. So sweet and refreshing!

I’m totally going to try making this! I think it would be such a refreshing summer drink!


Ever since Sunday I’ve been craving Thai food! The vegetable part is easy enough, but does anyone have suggestions for Thai sauces? I bet Trader Joe’s has some… but I haven’t looked!


Thank you for all your vegan/gluten free picnic suggestions! I’ve got a picnic planned for Sunday, so I’ll be sure to let you know what I end up cooking!

You know what it is…

*BOOM* It’s another WIAW with the lovely Jenn @ Peas and Crayons!


Here we go! Ready? Good.


A delicious green monster (consisting of 1 cup almond milk, 1 banana, 1 packet of stevia and a whoooole lotta spinach.) Plus a giant fuji apple, and some pb2+peanut butter.Ā  This kept me full through the morning, and my workout! (Unpictured: The Trader Joe’s Cocoa Coffee I’m loving!)


The perfect lunch after an intense workout! Trader Joe’s spiced soybeans! Check out the nutritional facts (and be sure to double it, because seriously, who eats half a package?) Yes, that’s 400 calories, 28 grams of protein and 24 grams of fiber.

*Side story* on Monday, we had a catered lunch with a vendor, but they didn’t have any vegetarian options šŸ™ Even the salads had bacon on them! I was a little sad, but my friend gave me her apple. Then my other friend gave me his apple. Then, everyone started giving me their apples and I ended up with 6!! Snacks for the whole week! Haha. I’m know going to be known as the apple girl. Oh well šŸ™‚

TJ’s chopped veggies (tons of veggies in there!) topped with TJ’s hummus (seriously, I’m on a major Trader Joe’s kick!) This is such a tasty, crunchy, veggie packed dinner. I love love love it. I also had some cheesy cauliflower on the side!

Later on I snacked on some frozen grapes, and…

Yummm I love Kombucha. Although, this flavor isn’t my favorite. I think I’ll stick to the pink one next time, whatever that is.

Thank you all for your comments on my last post! I’m glad I’m not the only one who feels weird about eggs!! I swear, you guys make me feel halfway normal about my eating habits šŸ˜‰

Now it’s challenge time. Does anyone have any vegan & gluten free picnic ideas?
