What I [Really] Ate Wednesday
Confession: Sometimes I’m super lame, and I eat the same thing over and over, and so I don’t actually show you want I ate in a day.
But Jen, our lovely host queen of WIAW made a request via twitter (if you’re not following me, you should be. I’m super awesome):
Ok Jen! This one is for you π
Breakfast:
- 1 medium banana
- 1 cup soymilk
- Tons of ice
- pinch of xanthan gum (it makes it thick!)
- crumbled ginger cat cookies (I’m still obsessed with ginger)
Lunch
- Black bean soup (recycled picture. You think I could actually get that kind of photo at my desk?) Click here for the recipe
- Salad from the cafeteria: lettuce + carrots + lentils + couscous + balsamic vinegar
- Popchips! (I’ve still got lots of these left!)
Afternoon snack
- Apple (unpictured because I’m pretty sure you know what an apple looks like)
Dinner
I warned you, I’ve been super lame lately.
- Fage 0% plain greek yogurt
- Blueberries
- Almond extract + stevia
- Slices almonds
Night time snack
Oh. My. Gosh. This stuff was amazing.
But you’ll have to come back Friday for the recipe π
Exercise
I don’t even normally call this out, but I have to mention that G-love willingly got his butt out of bed at 6:45, just to go on a run with me. I don’t think you understand how incredible that was. We only ran a couple of miles, but the weather was beautiful!
As if that wasn’t enough… he said he thought he might want to start eating yogurt in the morning. (Granted, this was being said as he was eating leftover pizza from the night before… but still.) Is it possible that the boy who hates vegetables is turning over a new leaf?
Mmm that nighttime granola…. what a perfect way to end the day! None of this looks boring btw, far from it Liz π
I’ve been on repeat with my meals, too. It’s probably a little sad, but I don’t mind. π
And I LOVE it when I recruit friends to run. Most people end up enjoying it way more than they ever thought they would…
I’m the same way with my WIAW. Maybe one day I’ll commit and do an actual post… but some of the things are really weird!! Best thing I ate today was a dark chocolate sea salt caramel. I don’t think I even have to tell you how great that was.

I am a fan of boring (and love the spoon in your soup). As for trying to get someone to eat healthy, I think saying less is best and positive reinforcement. Can’t wait for the granola recipe.

I know how you mean about the photos, though! My husband is always pickin’: “Didn’t you already take a million pictures of coffee??”
Hahaha I drive my friends nuts with my constant picture taking of food. I’ve been knowing to grab someones plate and run into my room so I can take a picture in my light box π
That yoghurty dinner looks really good, sometimes having stuff like that just hits the spot. I think the best way to push healthier habits is to lead my example. I was so chuffed with my hubby started eating oatmeal for breakfast!
Haha isn’t it crazy when it happens? But a little progress makes me happy! π

I suppose the best way to encourage healthy eating isn’t to push but to casually say every now and then how nice something you’re eating is to pique his interest π
